Preheat your oven to 350 degrees and line a cupcake pan with liners.
In a bowl, mix together your flour, sugar, and baking powder.
Add in your egg whites, oil, vanilla extract, and champagne, mix WELL and make sure your batter is smooth and lump free
Fill cupcake liners 1/2 way full and put into the over to bake
Bake for 20-25 mins.
Let cupcakes cool completely and ice with vanilla icing (For an extra kick of Champagne you can add in 1/2 a cup of champagne to your icing and mix together before icing.
Top with some festive sprinkles and serve!
