Working Mom What's for dinner: fancy salad

I try each week to tackle motherhood, working, owning a business and trying to be creative in the kitchen. I have come a long way from thinking you boil the water for 7 minutes then you add the pasta. We all have our strengths and weaknesses. I have just 30 minutes before the meltdown occur to get dinner on the table and have three happy children and one happy husband. The need for speed and healthy meals “within” the budget are my focus.

I love fancy salads. I like to make up creative ideas to increase my green consumption. I ran into Sam’s club and grabbed bacon and dates and goat cheese.

      This was super easy and really great. You can serve the bacon wrapped dates as an appetizers. The kids couldn’t get enough of them.

You will need to slice the dates in half and remove the pits. I stuffed them with goat cheese but blue cheese is also tasty. I then cut the bacon in half and wrapped the dates.

Place your dates on a tray in a 350 degree oven for 20-25 minutes or until the bacon is cooked.

I placed mine on a bed of spinach and sliced mushroom with olive oil and balsamic vinegar. It was a great way to create a sassy salad.
