Weight Watchers BLT Pasta Salad Recipe
One of my favorite types of meals to make in the spring is a great salad recipe! Nothing says spring like fresh veggies and a big cold salad. Salads are a great choice for a meal because they are quick, easy, tasty, and (mostly) healthy. Many of you know that I’ve been trying to follow some weight watchers recipes to keep my diet in check. This week I wanted to share with you this super easy Weight Watchers BLT Pasta Salad Recipe. It’s creamy, fresh, and super yummy!
Here is how to make this Weight Watchers BLT Pasta Salad Recipe:
You Will Need:
- 4 cups small macaroni shells, cooked
- 2 tomatoes, chopped
- Bacon Bits (you could also use real bacon)
- 1 cup lettuce, finely chopped
- 1/2 cup Fat Free Mayo
- 1/2 cup Fat Free sour cream
- Juice from 1 lemon
- Salt and Pepper to taste
- Optional- cooked peas and carrots
First, cook your pasta according to package directions. Drain, rinse with cold water, and drain again.
Next, place your pasta in a large bowl and add in your mayo, sour cream, and lemon juice. Mix them together. Add in your lettuce, tomatoes, bacon bits, salt and pepper and mix well. Give it a little taste test and make sure the seasoning is at your liking. I added in a little pinch of garlic too.
Then, cover and refrigerator about an hour before serving. Serve cold.
This Weight Watchers BLT Pasta Salad is perfect for cook outs, lunch on the go, or a Sunday with family. The best part? It’s all the flavor of a traditional pasta salad but only 3 PP per cup! Awesome right!?
