This weekend something magical happened, something that my family and I look forward to all year long, the farmers market opened! Yes, we really do get that excited about it, ha! In the last couple of weeks, we have found out that my husband is gluten intolerant. I have been scrambling to make breakfasts that I can cook ahead of time and freeze. I have to come up with meals that my kids and my husband will both like and they have to be easy. They have to be something I can make ahead of time. I headed into Walmart to buy some ingredients for what I hoped would be a special breakfast meal idea. I decided that a pumpkin waffle with Yopliat® Greek Yogurt sauce would be the perfect remedy. I will say my children loved the Yogurt dipping sauce so much that they asked me to put the rest in their lunch box with apple slices. This Lemon Poppyseed waffle recipes for kids was so easy to make. I had something very similar when I went to the Inn at Loretto .I had the most amazing Lemon Poppyseed Waffle with blueberries but I really wanted to add raspberries but strawberries or blueberries would also be nice. They had the most amazing food. I decided I could replicate their recipes with my kids. I think it is so important to offer healthy choices for your children. I paired this amazing recipe with greek yogurt and drizzled it with honey. I also used fresh Raspberries on top. This recipe can go from breakfast to dessert with a lemon sorbet instead of the yogurt. It is also a super snack because I made the waffles using a muffin mix. I know I totally cheated but it was worth it.
I love my Lemon Poppyseed Waffles. They were so easy to make. They are unique and fancy and easy to make with your kids. They would be a great addition to brunch, lunch, or dessert.
