What's for Dinner Wednesday: Chili

I try every week to add a new meal to our menu. I attempt to follow the food guru and 30 minute meal making queen, Rachael Ray. The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less!

I love chili.  We eat it on our hot dogs and we eat it with corn chips. The best part is you can dump whatever you would like in it. I grabbed a bunch of kidney bean cans on sale. I added some fresh onions and green peppers. Then a couple of cans of diced tomatoes. One of the cans had chili peppers in it. Then I cooked up some ground turkey and threw in some spaghetti sauce with a dash of sugar. I added chili powder to taste and yellow cheese to finish it off. The best part is the kids love to help make this one and since I actually cook it in the crock pot it is a great one to receive help with.

Working mom What’s for Dinner Wednesday: Salmon baguette

 

I try every week to add a new meal to our menu. I attempt to follow the food guru and 30 minute meal making queen, Rachael Ray. The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less!

This was one of my favorite meals in Prague so I recreated it at home. I took lettuce and salmon and a fresh baguette with Creme Fraiche. You can throw on some capers if you wish. It was quick and easy and so yummy.

Pulled pork.. without any work?

I have to say sometimes you just have to cheat. I said it you need to cheat and buy already cooked items. I know gasp I am not super woman or super chef. I am just trying to hold it together on any given day.

This is what I suggest buy the Jack Daniels $9.98 (I think) pulled pork from Sam’s Club it was YUMMY. It cooks in just 12 minutes. I bought $5 worth of macaroni salad and hamburger buns for $1.29 and we had some lemonade. It was so good I brought it to a party. It is fine to cheat. I mean everyone has to eat. It does not mean I have to prepare and cook the meal right?

Working Mom What's for Dinner: Potato Bar

I try every week to add a new meal to our menu. The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less!

The bake potato bar:

I bought a huge bag of potatoes for $1.. So I decided to make a potato bar.

Here are my sides:

Chili

Brocolli

Sour Cream

Cheese

Bacon

Butter

Tomatoes

I just bake the potatoes and the kids fill them to eat them up.

Working Mom- What’s for Dinner Frozen Shrimp

I try every week to add a new meal to our menu.   The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less!

Freeze Shrimp Quesadillas

I took part in the Harris Teeter’s  “buy one bag of Shrimp for $17.99 and get two free”. That makes them just $5.99 a bag. The problem is what should I do with all that shrimp? The answer is simple make some freeze ahead meals.  I try to cook a couple of dishes on Sunday because with my work schedule and three children I am always battling time and the 5:00 o’ clock hour where my kids go from humans to???

Here is one of those freeze ahead shrimp recipes just in case you also took advantage of the sale.

This feeds four. I will double the ingredients below so I have something quick to grab for lunch.

4 Tortillas

1 cup of Monterey Jack Cheese

½ cup of cooked shrimp chopped

¼ cup of thinly cut green onion tops

1 TBS of cilantro

½ TBS of garlic

Olive Oil to coat the pan

Serve with salsa or sour cream

Directions:

Thaw the shrimp and peel it

Place the olive oil in the pan with the garlic and the shrimp

Cook the shrimp until it is pink

Chop the shrimp

Place the shrimp, cilantro, onion, and cheese on the tortillas

Wrap them up and place them in a freezer bag

When you are ready to serve eat thaw them for 15 minutes

Then place them in a lightly coated pan of olive oil. You should cook them until they are golden brown. Then cut them and serve.
