Now that November is here, is anyone else planning their holiday dinner recipes yet!? I love cooking for the holidays and hosting dinners in my home for my family and friends. This year Thanksgiving will be held at my home, and I’m really hoping to impress and put on a fabulous meal for my family. One of my favorite things to cook is anything sweet! So I thought I would try my hand at making a homemade cheesecake this year, and I had to try it out before the holidays, for research, of course, ha! This gluten free upside down lemon pie is an excellent way to have dessert without a traditional piecrust.

Gluten Free Upside Down Lemon Pie

Ingredients

  • 4 egg yolks
  • 1/3 cup cornstarch
  • 1 1/2 cups water
  • 1 1/3 cups sugar
  • 1/4 teaspoon sea salt
  • 1/2 cup fresh squeezed lemon juice *see note about trying orange juice!
  • 3 tablespoons cold unsalted butter
  • 1 tablespoon finely grated lemon zest
  • 1 cup heavy cream
  • 1 teaspoon granulated sugar
  • For crust:
  • 2 large egg whites
  • 1/4 teaspoon cram of tartar
  • 1/4 teaspoon sea salt
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • whipped cream (can use heavy cream or lemon juice, vanilla, dry milk powder and sugar)

Instructions

  1. Put the constarch, water, sugar and salt in a medium size nonstick saucepan. Boil for 1 minute.
  2. Put 1/4 cup of this mixture in a separate bowl and add egg yolks. Whisk.
  3. Gradually add the rest of the boiled mixture while mixing well.
  4. Put back in the saucepan and heat for 1 minute.
  5. Remove from heat. Add cold chopped butter, lemon juice, and lemon zest. Mix well.
  6. Refrigerate for 2 hours.
  7. Pour in merinque crust.
  8. To make crust: Beat 2 egg whites till stiff. Add cream of tartar and salt then add 1/2 cup sugar gradually while still mixing.
  9. Add vanilla extract. Roll a small amount between your fingers- if you still feel the sugar continue beating until the sugar is dissolved. Put in greased 9 inch pie dish and design as desired. Then bake at 300 for 40 minutes.
  10. Beat 1 cup heavy cream with 1 teaspoon sugar until thick or stiff. If you want to make your own nonfat whipped cream: Combine 1/3 cup ice water with 1 1/4 teaspoons lemon juice, 1/2 teaspoon vanilla. Add 1/3 cup nonfat dry milk powder. Beat until stiff; add sugar and beat a few minutes longer.
  11. Pour the cooled mixture in the meringue crust. Top the lemon pie with whipped cream.
  12. *Varieties: The ingredient picture shows oranges- I love the orange juice for an orange creamsicle pie!

If you are looking for something sweet that won’t bust your calorie budget, this low calorie peanut butter pie is the perfect dessert for you! Only 216 calories a serving, and oh-so-sweet, it’s perfect for the whole family! This pie is also a no-bake pie that you can make in about 10 minutes!

Low Calorie Peanut Butter Pie

Ingredients

  • 1 jar of low fat peanut butter
  • 1/2 cup of sugar
  • fat free whipped topping
  • 8 oz fat free cream cheese
  • Gram cracker crust
  • Sugar free chocolate syrup

Instructions

  1. First, beat softened cream cheese and sugar together until smooth
  2. Then, add your peanut butter and beat until smooth (I put mine in a blender, but you could also use a hand mixer)
  3. Fold in your whipped cream until smooth and well blended
  4. Fill your pie crust with the mix and put in the fridge, uncovered for about 2 hours
  5. Drizzle some sugar free chocolate syrup over the pie and serve!
