Don’t have enough time in the morning to prepare breakfast? That’s also my problem, I usually go to sleep midnight to finish all my work and have to wake up around 6-7am, so most of the time it’s really hard to drag myself from bed to the kitchen to prepare breakfast. With 3 kids who go to school, it’s important that I feed them healthy and nutritious food to fuel them for the day, that’s why I decided to prepare make ahead breakfast recipes. Just before you go to bed, spend a few minutes in the kitchen to prepare breakfast and I assure you these still taste good in the morning. This Make Ahead Breakfast Basic Muffin Recipe is a big hit in our home, my family loves it!

Make Ahead Breakfast Basic Muffin Recipe

Make Ahead Breakfast Basic Muffin Recipe

Ingredients

  • 2 cups of flour
  • 1/4 cup sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp of vanilla
  • 1 egg
  • 1 cup milk (I use rice milk)
  • 1/4 cup oil ( I use olive oil)

Instructions

  1. I always combine the dry ingredients together first.
  2. Then I combine the wet ingredients together.
  3. Next fold the wet ingredients into the dry.
  4. You can use this base for almost all of your recipe needs.
  5. I used this for my lemon blueberry recipe. I just added in 1/2 a cup of blueberries and 1/4 cup of lemon juice.
  6. I added the lemon juice in with the liquid portion.
  7. Then once everything was mixed, I place the muffin mix in the cupcake papers in the muffin tin.
  8. I then add in the blueberries by hand. I just like them to look nice 🙂
  9. This basic muffin recipe yields a dozen muffins.
