Dry beans are a money saver.  Aside from having a large yield when cooked, they have a long shelf life and are nutrient-rich.  Beans are also a wonderful source of protein, fiber, and iron and they are naturally low in sodium and calories, unlike their canned counterparts which sometimes have up to 15% of the daily value of sodium. The only challenge with dry beans is the fact that you do have to plan ahead when preparing them.  They need to be soaked overnight before proceeding with a recipe, or at the very least, quick soaked.   If you don’t have overnight, you can “quick soak” them.  Rinse and sort ½ pound of beans; place in pot and cover with 3-4 cups hot water.  Bring water to a boil and boil for 2 minutes.  Remove from heat and let stand, covered, for 1 hour.  Drain soak water and rinse beans before proceeding with recipe.Continue reading

In my opinion, anything that’s served on a bun or eaten with your hands is the perfect family-friendly meal. I grew up eating Manwich sloppy joes.  Rather than use the canned sloppy joe sauce that is full of sodium, I gave home-made sloppy joes a try.  I used a coupon and got a can of fire-roasted tomatoes for next to nothing, so I built my sloppy joe recipe around those smoky tomatoes.

 To make the recipe as healthy as possible, use a ground meat that is naturally low in fat, such as, lean beef, turkey, venison, or chicken.   Serve your smoky joe on a whole wheat bun alongside fruit or veggies and you have a quick and easy, updated favorite.

Cranberry Orange Juice Chicken Recipe

chicken orange cranberry one pot dish (1 of 1)My dear friend, Laura, shared a recipe with me years ago called ” Sweet and sour Chicken”. It calls for 1 lb of boneless, skinless chicken breasts, 1 small bottle of Catalina dressing, 1 jar of peach preserves, and 1 envelope of onion soup mix. Simply mix together, pour over chicken breasts and bake. I have experimented with this basic recipe many different ways. Using pineapple preserves and the juice and zest of 1 lime creates the refreshing flavors of the Caribbean. An Asian-inspired variation uses orange marmalade and soy sauce topped with crispy chow mein noodles or wontons.

This year I am trying to eat healthy meals that are easy to make. I do not want to spend my time in the kitchen but I want to create meals that matter. I want healthy, tasty meals, that do not require a lot of dishes. I came up with this recipe. Continue reading

The busier life gets, the more I use my slow cooker.  I like meals that taste baked, but are actually made in the slow cooker which is a very easy method of cooking.  This casserole bakes slowly with very little moisture.  I was skeptical, at first, because this recipe didn’t call for any liquid in the slow cooker.  But, I gave it a try, and I’m so glad I did.  The edges browned beautifully giving the dish a crispy texture.  This recipe allows for substitutions, too.  Use your favorite “cream of” soup; use ground beef or turkey instead of sausage; use unpeeled or peeled potatoes; vary the cheese using Swiss or spice it up by using pepper Jack.
