I just heard that we might be getting now next week, just in time for Christmas! We haven’t had snow here in TN for Christmas in about 5 years! When it comes to cold weather one of my favorite things to cook and eat is my Low Calorie Crock Pot Chicken Chili! I love traditional chili but my husband has horrible acid reflux and and the red sauce in traditional chili is horrible for his stomach. So when I found a recipe for a chicken chili I knew I had to give it a try (with a few tweaks to make it my own of course) and I wanted to share with you this recipe that is a huge hit in my home around this time of year!
You Will Need:
First, layer your chicken at the bottom of your crock pot, then add your corn (undrained), both cans of beans, and rotel. Mix together and add in some chili powder and onion powder to taste. Cube your cream cheese and lay on top. Cook on High for 3-4 hours, or on low for 6-hours.
Then, about 30 minutes before serving shred your chicken and stir together. Season with salt and pepper. Make sure to leave the lid off and turn crock pot settings to “keep warm” to allow your chili to thicken up a bit.
At only 196 calories per cup this is a yummy recipe that will fill you up without busting the calorie bank! Enjoy!

I’ll admit so did I until I found this awesome recipe for Low Calorie Funfetti Cookies! Who doesn’t love Funfetti cake!? With a few simple swaps, and about 15 minuets you can have yummy, fluffy Low Calorie Cookies, and not ruin your whole diet! At only 78 calories a cookie, this is going to become a favorite dessert at this house, and maybe at yours too!
Yep, just 3 ingredients for this tasty treat!
Step 1: Mix the funfetti cake mix, eggs, and yogurt together until smooth (I did end up putting about 1/2 a cup of water in the mix to soften it up a bit)
Step 2: Preheat oven to 375 degrees and spoon batter onto a cookie sheet in drops, make sure they are about 2 inches apart. (I found 2 different ways to do this, one was to use a well greased cookie sheet, another was to use a cookie sheet covered in foil, so I tried both to find out which would work better)
Step 3: Cook cookies at 375 degrees for 10 minuets or until fluffy. I found that using the greased cookie sheet (I used olive oil) worked MUCH better then the foil, they slid right off, they tended to get stuck on the foil.
All together this took me about 15 minuets to do, and the cookies are awesome! It’s almost like eating a mini cake (minus the icing, and guilt) My 6 year old loved them, and I love that they are only 48 calories a cookie! This would be great for a sleepover, birthday party, or just to have a little something sweet!

It’s snowing today…in Tennessee…at the end of March! What madness is this!? So because of this cold weather, I was inspired to make this super yummy Low Calorie Healthy Lasagna Recipe!
