What's for Dinner Wednesday Seafood and veggies and rice

I try every week to add a new meal to our menu. I attempt to follow the food guru and 30 minute meal making queen, Rachael Ray. The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less!

This is an easy recipe sure to put a smile on your face!

Drizzle olive oil in the pan

cook 1/2 cup of onions

cut 2 tomatoes and 2 peppers

add a dash of fresh garlic

Then cook until the onions are transparent

add yellow rice and the water according to the package

Once the rice was cooked I added in some “fake” crab

and shrimp and squid

I cooked them until they were hot and threw in some salt and pepper to taste..

I just make this stuff up but it was good..

What's for Dinner Wednesday: Chili

I love chili.  We eat it on our hot dogs and we eat it with corn chips. The best part is you can dump whatever you would like in it. I grabbed a bunch of kidney bean cans on sale. I added some fresh onions and green peppers. Then a couple of cans of diced tomatoes. One of the cans had chili peppers in it. Then I cooked up some ground turkey and threw in some spaghetti sauce with a dash of sugar. I added chili powder to taste and yellow cheese to finish it off. The best part is the kids love to help make this one and since I actually cook it in the crock pot it is a great one to receive help with.

Working mom What’s for Dinner Wednesday: Salmon baguette

 

I try every week to add a new meal to our menu. I attempt to follow the food guru and 30 minute meal making queen, Rachael Ray. The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less!

This was one of my favorite meals in Prague so I recreated it at home. I took lettuce and salmon and a fresh baguette with Creme Fraiche. You can throw on some capers if you wish. It was quick and easy and so yummy.

Pulled pork.. without any work?

I have to say sometimes you just have to cheat. I said it you need to cheat and buy already cooked items. I know gasp I am not super woman or super chef. I am just trying to hold it together on any given day.

This is what I suggest buy the Jack Daniels $9.98 (I think) pulled pork from Sam’s Club it was YUMMY. It cooks in just 12 minutes. I bought $5 worth of macaroni salad and hamburger buns for $1.29 and we had some lemonade. It was so good I brought it to a party. It is fine to cheat. I mean everyone has to eat. It does not mean I have to prepare and cook the meal right?

Working Mom What's for Dinner: Potato Bar

I try every week to add a new meal to our menu. The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less!

The bake potato bar:

I bought a huge bag of potatoes for $1.. So I decided to make a potato bar.

Here are my sides:

Chili

Brocolli

Sour Cream

Cheese

Bacon

Butter

Tomatoes

I just bake the potatoes and the kids fill them to eat them up.
