Is meatloaf your comfort food? Meatloaf is one of the recipes that I crave from time to time, it’s a childhood favourite of mine. It’s one of the most versatile dishes you can make but I found out from a few friends that a lot of them are just not that confident to cook it. Well to solve that problem, I’m sharing my super Easy Mexican Meatloaf recipe. This tasty recipe can be freezed and you can even cook it in your crockpot.

Easy Mexican Meatloaf Ingredients

1 lb of ground beef
2 cups of crushed corn chips
1 cup of shredded cheddar cheese
2/3 cup of salsa
2 eggs beaten
1/4 cup of taco seasoning

Cook at 350 degrees for 1 hour.

I am a freezing cooking girl and I love my crockpot so this is what I did. I put mine in a pan and I turned it over inside of a galloon freezer bag. I flipped the meatloaf over and I took it out of the pan. Then I froze it. You can place it in your crock pot for 6-8 hours on low. I absolutely love this recipe. You can top it with ketchup. I however decided to add more salsa to mine.

This is another great recipe in our freezer to crockpot recipe series.

Olive Garden Zuppa Toscana Recipe Ingredients

1/2 pkg of precooked sausage 2 cups chopped frozen spinach
1 can chicken broth
2 cups cubed red potatoes
1/2 cup diced onion
2 tsp. minced garlic
1/4 tsp red pepper flakes

Prior to adding this into the crockpot thaw it overnight or empty the frozen version in the crockpot and place it on warm.

Place two cups of water in the crockpot prior to putting in the Zuppa Toscana Recipe in.  Then add the frozen spinach and 1 cup of heavy cream 30 minutes prior to serving.

I have never had this before and I was so amazed by how easy it is to make and how amazing it is to eat. I couldn’t believe how fast my children ate it. This a great recipe to freeze and it is a great recipe to make the morning of. I served this with a side of crusty bread. It was divine.

I need an answer to the madness in my house at night. The answer I came up with is freezer cooking. I have this super book and then I created some of the recipes my family loves and I made some freezer meals that I tweaked from the book below. The book is a great start but I had to make some of the recipes match my families likes and dislikes.

I love facebook. I posted on my personal status asking who wanted to make cook ahead freezer to the crockpot meals. I found three other friends that were up for my idea. The rules were simple we decide on portion number. We went over allergies. Then we decided on pick up. I decided to exchange with each person so I made 5 meals 4 times. I am giving away 15 of those and I will received 15 meals in exchange. I will end up with 20 dinner ideas that can be heated up quickly or placed in the crockpot.

The reasons I did this were:

  1. I hate to clean dishes
  2. I get tired of coming up with recipes
  3. I dislike trying new recipes having your friends share ones they already like is easier
  4. I like having new meals made for me
  5. I need a solution to what is for dinner
  6. I like how easy it is to make one meal and freeze it
  7. I saved money by planning ahead and making multiple meals
  8. I get to try new things
  9. I will have 20 dinners cooked for me and it only took me 3 hours to make my 5 meals that I traded.
  10. I will have new recipes that my family likes at the end of this

Cooking with Kids – How to Series 5

Cooking with kids– How to series 5 level 1 B recipes

Cooking with kids level 1 recipes can be divided to two groups:  A.  Ready to make and B. Pre prep.  Here are some ideas for level B, which require a bit of pre prep by an adult or an advanced child.

If you pre slice the strawberries then Strawberry Polka Dot cow parfait could be a good breakfast, snack or dessert.

If you pre chop the ingredients to Southern caviar it is a measure, mix, then dip with chips snack!

If you pre cook the noodles then this crock pot Macaroni and cheese recipe becomes a quick measure, mix, dump side dish.   We do not recommend recipes that require heating in the beginning of this series but the heat of a crock pot does not become an issue due to the fact that the crock pot is not turned on till all of the recipe requirements are completed.  The child should be in no danger of coming in contact with the heat.

If you pre slice the vegetables both of these recipes are healthy side dishes for children: Squash Parmesan Crisps, and Refrigerator Dill Pickles.

Almost every crock pot recipe could be a cooking with kids level one recipe if you pre prep the ingredients so your child simply measures, mixes and dumps.  Here are a few ideas:

Your child helper could do the first three steps of this Crock Pot Honey Sesame Chicken.

Check the cooking for a month or freezer cooking recipes.  Those recipes require prep of ingredients prior to freezing so the meal recipe is minimal.

Note: Many food processors and other chopping devices have a safety precaution that keeps it from turning on despite being plugged in , unless all pieces are in place.  Therefore these tools are quite safe for chldren once the blade and other parts are in place.  However, if you use these with your children you need be sure the child does not touch the blade as they are removing the chopped items.

Freezer Cooking: Calzones



I decided I was going to make Calzones because my family loves them and they are relatively inexpensive. Then I decided they would make a super freezer meal. I gathered all the toppings you would need to make an awesome pizza.

Calzone Ingredients:

ricotta cheese, olive oil, mozzarella cheese, cooked chicken, corn, frozen peppers, mushrooms, fresh garlic, Pepperoni, Italian Meat, cottage cheese and ziplock freezer bags. I bought a hug box of dough at Sam’s club for really cheap. I decided I was going to make my own flavor Calzones with what I had on hand.


I divided each ball of dough into fourths. I could have done fifths because we have five in our family but my husband likes his calzones stuffed to the hilt.

Then I cooked the mushrooms, frozen peppers which are a must from Trader Joe’s, garlic, in olive oil.

Then I stuffed the calzones with my favorite treats. This is the veggies with the frozen corn and cheese and the meat is chicken from the night before.


This is just the cheeses and the Italian meat and pepperoni.


Next I wrapped them up. Then I placed them in the oven at 350 degree for 20- 25 minutes depending on how stuffed I made them.

I placed them on a plate once I was done cooking them to cool. When they were cool I placed them in the ziplock bags. I frozen them.

Dinner take #2 Freezer cooking 

When we were ready to have these again I placed them in the refrigerator,.Then I put them in the toaster oven until they were hot. You can also put them in the oven in for 10 minutes at 350 degrees. I am going to be making these again soon what a super easy dinner or lunch recipe! I love making one mess and having several meals.
