This weekend my family is celebrating my Dad’s Birthday! His…30th….Birthday…yeah..Ha! Every year he requests an Italian Cream Cake as his birthday treat, and every year we scour the stores to find one. (They are actually pretty hard to find around here!). But truth be told we shouldn’t be getting him this indulgent cake every year. Why? Well, he is diabetic. Now you see the problem right? I didn’t want to deprive my dad of his favorite cake, so I thought this year I would try to make some Skinny Italian Cream Cheese Frosting Cupcakes! Are cupcakes good for you? Nope. Are these cupcakes better for you than a big slice of traditional Italian Cream Cake? Absolutely! Continue reading

Her, and the rest of the Kindergartners at her school get to dress up as their favorite Nursery Rhyme character and put on a parade for their friends and parents. How fun is that right? So I made this DIY Pom-Pom Cupcake and thought I would share it with you! I wanted to make a recipe that even my nine year old son would think was cool. When I made this glow in the dark frosting I was pleasantly surprised that it tasted good and was really simple to do. I was upset that I didn’t know about this chemical reaction earlier because I am positive I could have made this recipe more famous while attending college but anyway I figure sharing it on the internet would be a great way to make sure others get to enjoy the glow in the dark cupcakes.
Ingredients need to make cupcake frosting glow:
Frosting any vanilla or white kind will do
Green or orange jello depending on the taste you wish to achieve
How to make cupcake frosting glow
Pour jello in a bowl add 1/3 cup of tonic water
Then you will stir the jello
Place the mixture in an icing bag and mix it. Leave some tonic water and jello to spread on top.
Make sure you fully ice your cupcakes
Turn off the light and on the black light… mix up the jello and tonic water again
Repaint the cupcakes to achieve the color you want! Then enjoy your new neon rocking cupcakes.
