Olive garden Zuppa Toscana Recipe

This is another great recipe in our freezer to crockpot recipe series.

Olive Garden Zuppa Toscana Recipe Ingredients

1/2 pkg of precooked sausage 2 cups chopped frozen spinach
1 can chicken broth
2 cups cubed red potatoes
1/2 cup diced onion
2 tsp. minced garlic
1/4 tsp red pepper flakes

Prior to adding this into the crockpot thaw it overnight or empty the frozen version in the crockpot and place it on warm.

Place two cups of water in the crockpot prior to putting in the Zuppa Toscana Recipe in.  Then add the frozen spinach and 1 cup of heavy cream 30 minutes prior to serving.

I have never had this before and I was so amazed by how easy it is to make and how amazing it is to eat. I couldn’t believe how fast my children ate it. This a great recipe to freeze and it is a great recipe to make the morning of. I served this with a side of crusty bread. It was divine.

Ingredients

I love freezer cooking! It saves me money, saves time and I get to feed my family some great tasting meals. And crockpot cooking is my favorite, I love how convenient it is to just put all ingredients in a pot, check it after few hours and you’re done. Crockpot Freezer Meals are definitely heaven sent for busy moms. Our family love soups, so when I made a list of Crockpot Freezer Meals to do, I make sure that there are several recipes for Soups that Freeze Well. Today I’m sharing with you a very tasty Chickadilla Soup or also called Chicken Tortilla Soup, you can enjoy and eat it as soup or serve it over rice, either way it’s delish!

Crockpot Freezer Meals: Chickadilla Soup

Ingredients

  • 1 lb. boneless skinless chicken breast
  • 30 oz. diced tomatoes
  • 10 oz. mild enchilada sauce
  • 4 oz. chopped green chilies
  • 1 qt. chicken broth
  • 2, 15 oz black or pinto beans
  • 10 oz. frozen corn1/2 med. onion chopped
  • 1 tbs. fresh cilantro chopped
  • 1 tsp. cumin, chili powder and salt
  • 1/2 tsp. black pepper

Instructions

  1. Place all ingredients in slow cooker.
  2. Mix.
  3. Cook on low 6-8 hrs.
  4. After a few hours once chicken is cooked through, take out and shred, return to pot for remaining cooking time.
  5. Serve with crumbled tortilla chips, sour cream, shredded cheese, avocado if desired

I have been trying to make soups and family friendly meals that freeze well. I love both apples and sweet potatoes so when my girlfriend offered this Freezer to Crockpot Soup recipe as part of our meal swap. I was delighted. We have previously hosted a soup swap together. They are awesome this is how you host a soup swap.

Speaking of wonderful soups this Sweet Potato and Apple soup was divine. It is gluten and dairy free so it was perfect for a family with people who have allergies.

Freezer to Crockpot Soup: Sweet Potato and Apple Soup Recipe

Ingredients:

  • 2 Tablespoons olive oil
  • 1 1/2 cups chopped yellow onion
  • 3 medium sweet potatoes, peeled and cut into 3/4-inch cubes
  • 4 red gala apples, 2 will be peeled and cut into 3/4-inch cubes and two will be cut length wise as a garnish to reheat in the soup.
  • 2 cups low-sodium gluten-free chicken broth (or vegetable broth)
  • 2 cups water
  • 2 – 3 dashes of nutmeg
  • 1/2 tsp of fine sea salt
  • 1/4 tsp Ground black pepper

Directions:

I would suggest using a blender. I love my Blendtec you can see my Blentec Review.

You need to cook  the onions in the  heated pan of olive oil. I would then place the remaining ingredients in the pan to cook. Once you have completed that I would place them in the food processor or mixer of your choice and blend until the texture is like baby food fine with minimal chunks.

Once your soup has cooled you can place it in freezer bags frozen flat.

I simply placed my frozen soup in my micro wave to defrost to the point that I could place it in my crockpot. I placed my crockpot on warm until I was ready to devour this soup. We served the soup with the two apples on the top so it had some crunch to it. We paired it with grill cheese. I was super!

Beef Pot Roast & Veggies Crockpot Recipe

This week’s recipe is Beef Pot Roast & Veggies by Dana at The Coupon Challenge is a staple recipe in many homes. Since Dana’s husband and children love beef pot roast especially her meat and potatoes husband this is a family favorite!

Dana always recommends waiting until there is a good sale on a beef chuck or round bottom roasts to save money. Look for a 3-4lb roast and then load up on the veggies (depending on family size & crockpot size.) A 3lb roast with veggies can feed a family of four for a couple of days. Dana prefers to use the crock pot since it helps make the meat a bit more tender, and you can throw everything in and walk away for the day.

Polish Sausage, Potatoes, and Sauerkraut Crockpot Recipe

One of my favorite comfort foods is Sauerkraut. I know it may not sound as comforting as macaroni and cheese or ice cream but I loved when my mom made Polish Sausage and Sauerkraut. There as always something about the smells that would fill the house and the full bellies after dinner that brought comfort. With my busy schedule, I found that I could quickly assemble it in the crockpot and smell the awesomeness all day long. Here is my simple recipe for a little Polish comfort.

Crockpot Chili Recipe

This week’s recipe is Crock Pot Chili by Brett at Mama Loves Her Bargains that is sure to warm you on a chilly night!

Chili is one of my Brett’s favorite dishes to make when the weather gets cooler. It’s full of protein, and such a comfort food for us. This is more or less the chili her mom although some things have changed a bit over the years.

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1lb sweet Italian sausage (if you like more heat, use spicy!)
  • 1 15oz can dark red kidney beans, rinsed
  • 1 15 oz can red kidney beans, rinsed
  • 1 15 oz can black beans, rinsed (I forgot to get some of these so they aren’t included in the photo above)
  • 2 large cans Tomato Sauce (we prefer Hunts brand)
  • 1 small can tomato paste
  • Chili seasoning to taste
  • Hot peppers- to taste (We leave these in LARGE pieces, so that the kids don’t end up accidentally eating one)
  • 3 bell peppers and 1 medium red onion, sauteed to soften
