 This Lemon Poppyseed waffle recipes for kids was so easy to make. I had something very similar when I went to the Inn at Loretto .I had the most amazing Lemon Poppyseed Waffle with blueberries but I really wanted to add raspberries but strawberries or blueberries would also be nice. They had the most amazing food. I decided I could replicate their recipes with my kids. I think it is so important to offer healthy choices for your children. I paired this amazing recipe with greek yogurt and drizzled it with honey. I also used fresh Raspberries on top. This recipe can go from breakfast to dessert with a lemon sorbet instead of the yogurt. It is also a super snack because I made the waffles using a muffin mix. I know I totally cheated but it was worth it.

I love my Lemon Poppyseed Waffles. They were so easy to make. They are unique and fancy and easy to make with your kids. They would be a great addition to brunch, lunch, or dessert.

Many children have a difficult time learning to crack raw eggs. My solution: Crack the eggs into a ice tray!

Freeze them in the ice tray. Then when you know the children are going to help with breakfast you can either defrost individual egg cubes in a mug in the refrigerator with other ingredients or let the child get an egg cube from the ziploc freezer bag then assemble the mug by him or herself. Freezing eggs is an economical way to save eggs you buy on sale. Frozen eggs can be used in baking as well as this recipe! (They just don’t fry up well from a frozen state but fry fine if you let them defrost first.)
