St. Patrick’s Day Recipe: Grown-up Green Eggs and Ham

Green Eggs and Ham Recipe

I still remember being in 1st grade and reading Dr. Seuss’ Green Eggs and Ham. I could probably recite most of the book if I was inclined to try but I do digress. I also remember the day they made us try Green Eggs and Ham. I was not an adventurous kid and did not like to try new things. My mom learned the hard way once with Pierogies.  However, surrounded by class mates I was not going to be the only one not trying it. I soon realized that it tasted the same as regular eggs and ham. Now that I am older my palate is slightly more expanded and I want more flavors with dishes. I have amped up my recipe so that I get the flavor but it is not too much to turn off for my children.

Grown-Up Green Eggs and Ham!

 

Ingredients

8 eggs

1 can spinach, drained  (You could also use fresh spinach)

1 cup ham (diced)

1 tsp butter/margarine (you may also substitute cooking spray)

½ cup mozzarella cheese

Green Eggs and Ham Directions

In a medium bowl, wisk eggs together.

In a separate bowl mix together chopped ham and spinach

Preheat a medium skillet and melt butter to coat the bottom of the pan.

Pour in egg mixture to pan and cook as you would for scrambled eggs

In a small skillet heat up the ham mixture till it is warm.

Combine the ham mixture with the egg mixture and top with cheese.

Remove from heat and serve with toast.
