Spicy Steak Taco Salad Recipe

Serves 4
Active Time: 30 minutes
Total Time: 40 minutes (includes preheating grill)

2 1/2 lbs. sirloin steak tips
1 1/2 cups S & F Chipotle Lime Pepper Marinade (available at select Whole Foods Market or check out schlotterbeck-foss.com)
6 cups chopped iceberg lettuce
1 cup grape tomatoes, halved
1 cup drained and rinsed black beans or pinto beans
2 cups tortilla chips
1/2 cup grated cheddar cheese
1/3 cup sour cream
1/4 cup sliced black olives
2 scallions, thinly sliced
1 lime, cut into 8 wedges

Place steak into a gallon-sized food storage bag. Add the S&F Chipotle Lime Pepper Marinade. Seal the bag. Gently press on the bag to incorporate the marinade into the steak. Refrigerate for up to 24 hours.

Preheat the grill. Grease the grill with cooking spray. Place the steaks onto the grill and cook until well-marked, about 5 minutes. Turn and continue to cook to desired doneness, about 5 minutes for medium. Allow the steak to rest for 5 minutes before slicing. Set aside 2 sirloin steak tips for another use like Spicy Steak Breakfast Burritos (recipe below). The cooked steak can be refrigerated for three days.

While the steak grills, assemble the salads. Divide the lettuce, tomatoes, beans and tortilla chips between four plates or shallow bowls.

Slice the steak and divide it between the plates. Sprinkle 2 Tbsp. cheese over each salad. Add a generous Tbsp. sour cream to each salad. Sprinkle the olives and scallions over each salad.

Garnish each plate with 2 limes wedges. Serve immediately. Alternatively, all of the ingredients can be served family-style and everyone can assemble their own salad.
