If there is one thing I love when it comes to recipes, it’s easy recipes. And what can get easier than a little prep work and a lot of slow cooking? Not much! I use my slow cooker at least once a week, and it really helps this busy mama be able to avoid the fast food line, save some money, and time. With that being said I wanted to share with you one of my latest recipes. These slow cooker buffalo chicken meatballs are amazing. They have just the right amount of spice and flavor. Plus, they take about 10 minutes to prepare. This recipe would make a great appetizer or dinner, and it’s an easy recipe to double so you can feed a crowd. 

Here is how to make my Slow Cooker Buffalo Chicken Meatballs Recipe:

  • 1 lb Ground Chicken
  • 1 lb Hot Ground Sausage
  • 1 egg
  • 1/2 cup Bread Crumbs
  • 1/2 cup Grated Cheese
  • 1 bottle Buffalo Sauce
  • 1/2 Stick Butter
  • Optional: Ranch

First, In a bowl combine your chicken, sausage, egg, cheese, and bread crumbs. Mix by hand until well combined.

Next, In your slow cooker combine your butter and buffalo chicken and set on high.

Then, form meatballs from your mixture and place them in a single layer in your slow cooker. Cook on high for 6 hours. Stir a few times to make sure the meatballs are evenly coated in the sauce.

Last, Take your meatballs out of the slow cooker, and (optional) drizzle with ranch. Serve hot.

See how easy is that? This was the first time I have worked with ground chicken, and I must say, I don’t think I can go back to traditional meatballs. These are just too good. And a little better for you than hamburger meat too! Win-Win! And if spicy isn’t your thing, you can still use the base recipe for the meatballs and change the sauce. Enjoy!
