Slow Cooker Pork Loin With Orange Sauce Recipe
6 (1-inch thick) lean pork chops
zest of 1 orange
juice of 1 orange (about ½ c.)
¼ c. light barbecue sauce
1 T low-sugar orange marmalade ( I use an all natural version)
2 T. low-sodium soy sauce
Salt and pepper pork chops; sear on all sides over medium-high heat. Meanwhile, zest one orange and set zest aside. Cut zested orange in half and squeeze juice into a 2-cup measure. Add barbecue sauce, orange marmalade, and soy sauce; mix well. Place seared pork chops in slow cooker. To hot pan, add orange juice mixture and stir well, removing all cooking bits from bottom of pan. Remove from heat and stir in orange zest. Pour mixture over pork chops in slow cooker; cover. Cook on high 2 to 2 ½ hours or until tender. Remove pork chops and keep warm. To cooking liquid, add 1 T. cornstarch that has been dissolved in ¼ c. COLD water; stir well. Cover and cook on high 15 minutes, or until thickened.
Give this slow cooker pork chop recipe a try. Since the cooking time is only about 2 hours, you should use the setting on your slow cooker to automatically shut off when cook time is complete (if yours has this feature). That way, your pork chops won’t dry out. You can substitute large boneless, skinless chicken breasts, if desired. When you’re ready to serve, simply steam some rice and broccoli or ramen noodles (cooked without seasoning packet) and green peas.
