Simple Loaded Mashed Potato Casserole Recipe

You guys, just last week we were all complaining that it didn’t feel like winter time (it was about 70 degrees!) and mother nature must have heard all the fuss because it is a balmy 25 degrees this morning. Can I take back what I said about the warm temps? Ha! On a cold day like today, I like to think of a simple recipe that is warm, filling, and easy to make. So I wanted to share with you one of my favorite, which is my simple loaded mashed potato casserole recipe! The great thing about this recipe is that it makes a great main dish, side dish, or potluck dish! 

Here is how easy it is to make this Simple Loaded Mashed Potato Casserole:

You Will Need:

  • 3 lbs Russet Potatoes
  • 2 cups Shredded Cheddar Cheese
  • 8 slices Bacon (cooked and crumbled)
  • 1/2 cup Sour Cream
  • 1/2 cup Milk
  • Green Onions (chopped)
  • Salt and Pepper to taste

Instructions for my Loaded Mashed Potato Casserole Recipe:

Step 1: Wash and Bake your potatoes in a 425 degree oven for 45 minutes or until fork tender.

Step 2: Once your potatoes are cooked, scoop them out in to a bowl. Be careful they will be HOT! (Ask me how I know haha).

easy loaded potato casserole recipeStep 3: In a large mixing bowl add all of your ingredients and whisk until blended. Make sure not to over mix, you want a fluffy loaded mashed potato casserole, not a gluey one!

loaded mashed potato casserole recipeStep 4: Add your now mixed loaded mashed potato casserole into a dish and sprinkle with some extra shredded cheese, because you can never have enough cheese, and bake at 350 degrees for 15 minutes or until cheese is bubbly. Serve hot and enjoy!
