Grilled Chicken Caesar Salad

Grilled Chicken Caesar Salad

Make your grilled chicken caesar salad more flavorful with a twist of a delicious marinade. This recipe uses S&F garlic and herb marinade.

Grilled Chicken Caesar Salad with Garlic and Herb Marinade Recipe


Serves 4
Active Time: 25 minutes
Total Time: 40 minutes (includes heating the grill)

3 lbs. boneless skinless chicken thighs
1 1/2 cups S&F Garlic and Herb Marinade (available at select Whole Foods Market or check out schlotterbeck-foss.com)
2 heads romaine hearts lettuce
1 cup Caesar salad croutons
2/3 cup Caesar dressing
1/3 cup shredded Parmesan cheese
freshly ground black pepper

Place chicken thighs into a gallon-sized food storage bag. Add the S&F Garlic and Herb Marinade. Seal the bag. Gently press on the bag to incorporate the marinade into the chicken. Refrigerate for up to 24 hours.

Pre-heat the grill. Grease the grates of the grill with cooking spray or oil. Place chicken on the grill and cook for 8 to 10 minutes, or until well-marked. Turn and continue to grill until done, about 8 to 10 minutes more. Allow the chicken to rest for 5 minutes.

While the chicken grills, wash and dry the lettuce. Cut the lettuce into bite-sized pieces. Divide the lettuce between 4 plates. Top each salad with 1/4 cup croutons and a generous 2 Tbsp. dressing.

Set aside 1/2 of the chicken thighs for another meal like Tortellini Alfredo with Chicken and Broccoli (recipe below). The cooked chicken can be refrigerated for three days.

Cut the remaining thighs into strips and divide them between the salads. Garnish each salad with a generous Tbsp. Parmesan and freshly ground black pepper.

Serve immediately. Alternatively, this salad can be assembled in a large serving bowl and served family-style.
