Chicken Cacciatore Pressure Cooker Recipe
It is Thursday night here in Virginia. That can mean only one thing. The same thing that happens each night will happen again it is as inevitable as the weather person saying there is a 50% chance of rain while it is raining outside. I that time of night that has come way to quickly like a wave the broke and you didn’t realize it in time as you are spun in its power as it encompasses you.
It is dinner time. The time when everyone has an opinion but no one but you is willing to cook anything. You have a secret weapon now. You have a pressure cooker and you have answered the question Is a Pressure Cooker Worth It?
Yes, it is on times like tonight only a Pressure Cooker can save you. You need a Pressure cooker recipe that is gluten free, dairy free, egg free. You need a recipe that takes advantage of that sale on chicken. You need a recipe that is Weight Watcher’s friendly. You need a recipe that tastes like this!
I present to you the lifeboat in those crazy waves of life.
Pressure Cooker Chicken Cacciatore Recipe
- 3 pounds uncooked boneless, skinless chicken breasts, cut into bite-size pieces or 4 chicken thighs with bones
- 1 pepper any color is fine, sliced
- 2 tablespoons minced garlic
- 1 cup of diced tomatoes
- 1 can vegetable broth or vegetable broth
- 3/4 tsp dried crushed oregano
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup of diced onions (you can leave these out if you want) I love them, my kids, not so much.
- Parsley to top the dish
In a shallow dish, combine everything but the chicken and the soup.
Place the soup at the bottom of the pressure cooker
Then layer the chicken thighs in the pressure cooker
Add the ingredients in that you placed in the bowl (Parsley is for presentation at the end). I keep the pressure cooker set 15 minutes for thighs.
When the timer goes off, release the steam valve, using proper precautions. That means using your silicon gloves and facing the steam away from you!
Open the lid and stir.
Let the chicken sit for a minute or two
Remove the chicken to plate and top with parsley
