Baked Salmon with Pesto
Fresh salmon is in season and not only is it healthy but it’s also very versatile. There are a lot of different ways to cook it, but my favorite is oven baked salmon in foil with pesto. In less than 30 minutes we have a great meal that is not only easy to make and tasty, but it looks great too. It’s perfect for busy weeknights, or if you want something that will look elegant for when you have guests, then this recipe is for you.
Oven Baked Salmon in Foil with Pesto Recipe
Ingredients:
4 (6 oz) skinless salmon, skinless fillets
1-pint Sliced Grape Tomatoes
1/4 cup of red onions
2 large peppers (I like orange and yellow for the colors)
4 tbsp Pesto, homemade or store bought see our recipe for pesto without nuts
1 Salt and freshly ground black pepper
3 tsp Olive oil
I roll of heavy foil
This is an easy and healthy recipe, and it makes clean up a breeze. I create four squares of foil that are double the size of your salmon slices.
You will then need to place the salmon in the middle of the foil packet.
Then I put the onions and peppers under the salmon.
Then apply some olive oil and salt and pepper.
I then put on a layer of pesto.
The final layer is the sliced tomatoes on the top. You then close the foil and create packets of the salmon.
You can place these on the grill. I put them in my oven at 400 degrees for 25 minutes it depends on how thick your salmon is. I check on them to make sure the salmon is pink. We like our salmon a little raw for we leave them in for less than 22 minutes.
