Mussels build muscles

I was scared at first. You know to cook mussels. They always appear on fancy dishes in fancy places. I thought they must require a lot of preparation and they must be expensive. The truth is they are cheap and easy. That is how I like my meals. I only have so much time and so much money so I like to make the most out of both!


If you can boil water you can make mussels. It is really that easy. I am the kind of cook that just doctors up my sauce. I mean I barely have time to cook anything so cooking from scratch with three little ones is not an option. I do love healthy veggies so I try to hide when I can.

Here is how you can flex your muscles. You boil water and make sure you have enough water to cover the mussels. Then I add in a couple of tablespoons of garlic. If you would like you can also chop some red onions. You place the lid over a pot of boiling water. It usually takes between 5-7 minutes. I just make sure the shells are open. Then you place them in the strainer.

The sauce is my toss it variety. I have a secret I use a can of diced tomatoes with jalapenos and the kids love it. I always put something in the store bought sauce to make it special. The kids love it when I put in mushrooms and I ask them what veggies they would like to add.  We try to involve them in the hide it veggie sauce.


Add the veggies and turn on low heat until cooked

Then you place the mussels and the sauce together. I always have a bowl near for the shells and a green salad and garlic bread make this cheap and simple meal a bit fancy! The sauce cost $3.00 including the secret can and veggies. The mussels were $6.50 and the pasta was $.75. This is a bit over my $10 meal with the salad and the bread but to feed 5 people it is less than one of us eating it at a restaurant.
