Last Sunday, after summer has ended after what seemed like four days of July and June. I realized I was again home without the children. I began to plan our menu. I know two things 1) gone were the lazy mornings of summer only to return with endless tasks in their places and 2) I know how to make the best grilled cheese. I can make a grilled cheese that is golden brown, melts in your mouth with cheese that oozes out of your mouth so I added it to my menu plan and when I went to Kroger I bought everything I needed for Grilled Cheese and Blueberry Strangewhich which I found on the Hellmann’s website. They have several recipes to encourage creativity in your house.
I am like you, we both feel like our lives become one task after another now. We are stuck in the assembly line of parenting and food production. I know I needed something that brought me back to summer. A sweet and savory meal that my children would love. I needed something that was easy to prepare and would travel well from one activity to another. I needed a meal that my oldest could help me prepare.
Cooking together is a secret we have for making back to school enjoyable. I find my oldest son loves to cook with me. It is our time to talk about the school and create memories at the same time. He is at the preteen age where he isn’t sure what to make of the world and how much responsibility to take in the family. I love to encourage him in the kitchen, and we love to make meals we know his brother and sister can’t resist. Who could resist a grilled cheese with Hellmann’s Mayonnaise? Well, not anyone I know.
The trick for any sandwich is to use Hellmann’s on the outside of the bread. I promise if you do this you will have the best crispy bread when you cook it. Yum!
Now on to a recipe that you can make for dinner, lunch, or if you cut this right, it can be appetizers.
Grilled Cheese and Blueberries Strangewich Recipe
2 cups fresh blueberries
2 tsp. granulated sugar
4 Tbsp. Hellmann’s® or Best Foods® Real Mayonnaise
8 slices sourdough bread
8 ounces sliced Gruyere cheese
Get out a bowl and toss the blueberries with sugar in small saucepan and cook over medium-high heat, mashing occasionally with a fork. You will want them slightly thickened. This should take about 5 minutes. Then, set aside.
Evenly top 2 bread slices with cheese, then blueberry mixture. Spread outside of sandwiches evenly with Hellmann’s® or Best Foods® Real Mayonnaise. Repeat.
Cook sandwiches in large nonstick skillet over medium heat, turning once, until golden brown and cheese is melted, about 5 minutes.

You can place these in foil to keep them warm if you are a sports mom like me and need to pick up a child from sports at school to go to another sport.
