I just heard that we might be getting now next week, just in time for Christmas! We haven’t had snow here in TN for Christmas in about 5 years! When it comes to cold weather one of my favorite things to cook and eat is my Low Calorie Crock Pot Chicken Chili! I love traditional chili but my husband has horrible acid reflux and and the red sauce in traditional chili is horrible for his stomach. So when I found a recipe for a chicken chili I knew I had to give it a try (with a few tweaks to make it my own of course) and I wanted to share with you this recipe that is a huge hit in my home around this time of year!

Here is how to make my Low Calorie Crock Pot Chicken Chili:

You Will Need:

  • 1 pound boneless chicken
  • 1 can black beans
  • 1 can white chili beans
  • 1 can rotel
  • 1 can corn
  • 1 packet ranch dip
  • Chili powder
  • Onion Powder
  • 8 oz Light cream cheese

Instructions:

First, layer your chicken at the bottom of your crock pot, then add your corn (undrained), both cans of beans, and rotel. Mix together and add in some chili powder and onion powder to taste. Cube your cream cheese and lay on top. Cook on High for 3-4 hours, or on low for 6-hours.

Then, about 30 minutes before serving shred your chicken and stir together. Season with salt and pepper. Make sure to leave the lid off and turn crock pot settings to “keep warm” to allow your chili to thicken up a bit.

At only 196 calories per cup this is a yummy recipe that will fill you up without busting the calorie bank! Enjoy!
