Kids Low Carb Recipes: Gluten Free “Cookie” Butter
Enjoy this Gluten Free Cookie Butter without the stomach discomfort!
Have you tried Trader Joes Cookie Butter or avoided it due to the gluten? It is delicious and I decided to try to make a healthier version. I am so glad I tried because this turned out amazing!
If you do not have a food mill you can do this in a food processor. Simply be sure to stop frequently to wipe down the sides of the processor and make sure your machine does not overheat.
- 2 tablespoons flaxseed
- 2 tablespoons coconut oil
- 2 c almonds
- 2 inches peeled fresh ginger
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1/4 teaspoon cinnamon
- 2 tablespoons molasses
- 2 teaspoons coconut sugar
- 1 tablespoon honey
- Process the flaxseeds, almonds, coconut oil and ginger.
- The center bit of light almond butter is what it looked like prior to adding the following ingredients- the shade gets much darker.
- Add the spices, molasses, coconut sugar and honey.
When I made this the coconut sugar got warm in the machine and started melting then clogged up the machine. The next time I made it I simply stirred in the coconut sugar with the honey and spices. Adding the coconut sugar during this step also gives the butter a better texture!
Due to the lower glycemic sweeteners in this recipe this is also a great diabetic recipe for kids! If you have allergies to tree nuts, you may still be able to eat this recipe in that almonds are considered a fruit seed!? Prefer peanuts or cashew flavor? Try them with these same sweeteners and spices.
