Easy Crockpot Meatloaf: Apricot Stuffed Crockpot Meatloaf
 
Ingredients
  • ½ Jar of Apricot jam or 9 oz
  • 1 Large Onion (Chopped)
  • 1 Large Bell Pepper, chopped
  • 2 Eggs, beaten
  • ¾ Cup Milk
  • ¾ Cup Breadcrumbs
  • 1 Package Dry Lipton Onion Soup Mix
  • 2-3 Pounds Ground Beef
  • Foil to line the pot
  • Crockpot
Instructions
  1. Line your crockpot with foil or buy those awesome liners for an easy clean up
  2. Then set it on low
  3. Mix together the Eggs...Milk...Dry Crumbs...and Onion Soup Mix.
  4. Then add meat and Onions and Peppers... mix all thoroughly
  5. Then make in to a boat shape and fill it with the jam.
  6. Then a attach the sides to the top. I always reserve a little of the jam to glaze the loaf 15 minutes prior to serving!
  7. Cook for 6-8 hours
