Easy Baked Chicken Recipe

I try every week to add a new meal to our menu.  The best part of my quest is I use items that I bought on sale so these meals are yummy and affordable… and oh, yes they can be completed in 30 minutes or less.


I am still working and I know I have meeting until 5:30 tonight so I am putting together the easiest meal available.

I take a whole chicken and wash it.

Dry it with paper towel

Place olive oil on the skin

Literally throw in 1 cup of chicken broth, some carrots, celery, potatoes, tomatoes, an onion (peel do not chop)  these are options not essential

bake at 350 degree for about 2.5 hours or until chicken is 180 degrees

The best part the chicken was $4.00 and the rest was about $2.00 so dinner for $6.00.
