I usually cook a Rachel Ray’s recipe but I had to take a break. Why? Well, My friend posted her amazing soup recipe on Face book. I asked if I could share it with you. This is the best soup I have ever had using squash and it freezes well.
This soup is a family favorite and the recipe has been passed to me from my mother in law. I still remember the first time I had this soup and I love it every time I make it. We eat a lot of crock pot meals and soups but so many of our favorite recipes have chicken in them that we get tired of chicken. This smoked sausage corn chowder recipe is a nice way to change things up.
2 pkgs Smoked Sausage, sliced
3 cans whole kernel sweet corn
3 cans cream corn
1 onion, chopped
1 green pepper, chopped (optional)
1 container fresh mushrooms, sliced
16oz sour cream
family size bag frozen hashbrowns, cubes not slivers
1 tbsp olive oil
Note: If you slice up the Smoked Sausage before you are ready to add it to the pan you may have to fight off the sausage thieves. The thieves, big and small, with their little hands quick as lightning will steal the sausage slices right off the plate right out from under your watchful eyes.
In the bottom of a large heavy bottom soup pot. Saute onions, green peppers (optional), and mushrooms until soft in a tbsp of olive oil. Add sausage and saute until heated through or lightly. browned. Add corn and cream corn. Bring to a boil and then allow soup to simmer on low heat for several hours.
An hour before you are ready to eat, add the bag of hashbrowns. Add sour cream right before serving. Serve with fresh bread.

I have been trying to make soups and family friendly meals that freeze well. I love both apples and sweet potatoes so when my girlfriend offered this Freezer to Crockpot Soup recipe as part of our meal swap. I was delighted. We have previously hosted a soup swap together. You need to cook the onions in the heated pan of olive oil. I would then place the remaining ingredients in the pan to cook. Once you have completed that I would place them in the food processor or mixer of your choice and blend until the texture is like baby food fine with minimal chunks.
Once your soup has cooled you can place it in freezer bags frozen flat.
I simply placed my frozen soup in my micro wave to defrost to the point that I could place it in my crockpot. I placed my crockpot on warm until I was ready to devour this soup. We served the soup with the two apples on the top so it had some crunch to it. We paired it with grill cheese. I was super!
