I love pasta and it is a great way to make tasty side dishes for parties, showers, barbecues, and potluck meals. When I was trying to lose weight I had to modify my favorite pasta salad recipe into a Low Calorie Pasta Salad so I could still have a go to side dish. I find that this Low Calorie Pasta Salad was so easy to swap out with my normal calorie laden option that no one noticed my healthy swap. Now that my favorite pasta salad is Low Calorie, I am able to enjoy a serving without breaking my daily calorie bank or feeling like I need work out for an extra hour. Okay, So I am going to the store to buy a baked ham. I know I will need to reinvent it a couple of times to make it worth the cost. We have a craving for my sister’s famous sandwich: brie, ham, raspberry jam, toasted on a baguette. So I figured might as well make dinner too. I am also going to make some quiche for a friend with a new baby. Then I am going to make the Rachel Ray’s Ham sandwich with this yummy Apple Salad on top. We will eat the Apple salad with the baked ham for dinner and then we can have the leftovers via a yummy sandwich. I think I should be able to get my $20.00 out of this ham. What do you do with ham left over food?
I am a huge salad lover but get tired quickly of Caesar and Greek Salads. Combine the following ingredients and chill
3 C cottage cheese
2 T honey
3 T lemon juice
1/4 C raisins
1/2 C chopped nuts
1T poppy seeds
2 Medium tart apples diced
Other add ins
Serve as a salad or side dish, or enjoy with some crackers!! Delicious and nutritious!
