Summer is the time for peaches in fact most peaches are grown between Mid-June and early September. These juicy fruits are not only a great treat but they are a vital part of summer fun. We always go peach picking during the summer. Who could blames us the problem is what do you do with all these peaches? I for one was tired of just eating them the normal way. I just happened to come up with a fancy sandwich wrap that tastes divine. It is so amazing that I frankly can’t get enough. This peaches with mascarpone recipe is one that will tickle your taste buds and leave you wishing for another after your first bite.
School is starting and so does the chaos. That is at least in my house. I get so tired of being the short order cook so I have taught my kids to cook a couple of things on their own. Can you believe that in just a few short weeks school will be back in session!? For me that means no more leisurely mornings with my kids just hanging out, it means hectic mornings of making sure lunches are packed, clothes are on right, and most importantly, that my kids get a good breakfast before they go to school. Now I don’t know why, but kids can be picky eaters, am I right!? My daughter for example, will not eat anything whole. If it’s a sandwich, it has to be cut into fourths, apples cut into slices, you get the picture ha. So when it comes to breakfast I’m always looking for creative ways to serve my kids breakfast that will ensure that they like it and will eat it all.
Well lucky for me there is something that my kids will always eat, and that is (pretty much) everything that happens to be cut up and has a toothpick in it. I don’t know why, but it always works! So Thanks to Jimmy Dean® and State Fair® my kids and I were able to come up with a fun breakfast that everyone will love to munch on in the morning!
So before making our yummy breakfast creation we packed up and headed to WalMart to grocery shop. I love shopping at WalMart because they always have everything I need at a great price! You can find Jimmy Dean® and State Fair® in the freezer aisle.
I know some of you might be wondering, corn dogs for breakfast? The simple answer is YES! My kids love it! And anything that is easy to throw together is perfect for this busy mom! So stay with me, this breakfast creation is going to savory and sweet, and your kids are going to love them!
Step 1: Ok first what you are going to do is heat up your Jimmy Dean® Sausage, Egg & Cheese Croissant Sandwiches and your State Fair® Corn Dogs. Try not to eat them before so you can get to the next steps ha!
Step 2: Cut your Jimmy Dean® Sausage, Egg & Cheese Croissant Sandwiches and State Fair® Corn Dogs into pieces and stick a toothpick into each piece.
Step 3: Ok, now it’s time to bring the sweet. Hit your pieces with some maple syrup drizzle! Hungry yet?
Step 4: Finish it off with some powdered sugar and bam! You have an easy breakfast that takes only minutes to make, and will sure to be gobbled up in minutes.

I am forever trying to find different cake mix cookie recipe and the easier they are the better, that is if it takes good. I found a winner here. You can not get any easier than this! Just 4 ingredients and they taste amazing! I love going to the mall and getting a piece of cookie cake… and if my husband isn’t with me I ask for extra icing!! Hey, don’t judge, I’m 8 months pregnant. I have tried making cookie cakes at home but I usually get the outside over cooked and the middle is still a little gooey. This recipe is a winner! Everything was fully cooked and none of the cookie cake was over done! Next time I try this I will mix up the ingredients because I love a peanut butter cookie cake. This time I just went with the classic chocolate chip.
This is a great recipe for kids to make as well!
Pre-heat oven to 350 degrees. Mix all ingredients together in a large bowl. It will be very thick and that is ok! Grease a 9 x 13 pan and then spread the mixture into the pan. Again, because it is so thick it will be hard to spread. I used my fingers to do it…darn, or you can use a greased spoon to help!
Once you oven is pre-heated, bake for 20 minutes. Let it sit for at least 20-30 minutes. If you try and serve right away it is hard to cut. Just like a cake you need to let it rest for a little while. I will still be soft and chewy!!

Eat your cookies with Hot chocolate with cool whip heart!
I need Healthy Breakfast Muffins for my children. I need muffins I can make ahead of time and then freeze. I need something to throw in their lunch pail for snack. I decided cooking ahead and making these muffins is a great way to save money and help my kids make healthy choices.
2 eggs (1/4 banana for each egg or 1/4 cup of apple sauce)
1 teaspoon vanilla extract
2 cups applesauce, unsweetened
1 banana, mashed
1½ teaspoons sugar
5 cups quick oats
¼ cup flax seeds (found in the natural food aisle)
1 tablespoon ground cinnamon
3 teaspoon baking powder
1/2 teaspoon salt
2¾ cups rice milk or milk
golden raisins, and chocolate 1/4 cup of each
You will combine all of the dry ingredients together and stir. Once then ingredients are stirred you will mix the wet ingredients in a second bowl. Then you will slowly combine the wet ingredients into the dry ingredients.
Then you will scoop out your muffin mixture into the muffin liners. I like to add my raisons and chocolate to each one. I have kids that like more of one or the other so I make them for each child. I even let my children do this part.
Then we place them in the over at 350 degrees for 12-15 minutes. You will let them cool and serve them or cover them for later. I have frozen them for up to three months and placed them frozen in their lunch book in the warmer months for snack.
