Summer is here, and one of the best thing about summer is the fresh seafood. I love the sweet flavor of crabs, and crab cakes are a big hit in my family. It’s the perfect summer seafood appetizer for our gatherings. I found the best way to cook crab cakes and it’s cheaper and has no fillers unlike those expensive ones from restaurants. This crab cakes recipe is a winner! You only need a few minutes to make this, and the result is oh so delicious.

Keeping a number of kids easy recipes at the ready makes snack time in our house so much easier. My kids like to help out in the kitchen but not necessarily when I need them to. Today they wanted a snack while I was in the middle of house cleaning. Instead of stopping what I was doing and making them something, I let them make these fresh and healthy fruit kebobs.Continue reading
For the last three summers, Cathy and I have jumped into the world of canning. We started off small, just doing applesauce and sliced peaches. Last year we experimented with peach salsa. It was fabulous! We have also canned pickles, peach jam, blueberry jam, apple butter, apple pie filling and apple jelly in the past. It is so delightful to have these goodies in the middle of winter!
Last weekend, I went to purchase the peaches for our peach salsa. I originally wanted to use the little orchard right down the road. However, we had terenchal rain on Saturday and they are closed Sunday. So, off to Carter’s Mountain I went. My intentions were to make it an adventure day for my boys and take them peach picking. Wouldn’t you know it, they both fell asleep in the car on the ride there! I opted to not wake them and went to check out the pre-picked fruit. I told one of the workers that I needed peaches for canning. She told me the best deal would be getting the bruised and very ripe peaches. Since I was canning that day, these peaches were perfect! I ended up getting a half bushel for $5.00!
We used garlic, tomatoes and jalapenos from Cathy’s garden. I bought red bell pepper, cilantro and red onions for about $4.00. We ended up with 19 half pint jars of salsa and 5 half pints of freezer peach jam for $9.00! Plus we had enough sliced peaches left over for each of us to make a cobbler.
Pork chops, ground beef, and chicken thighs are three items from the meat department on my grocery list every week. The reason for this is simply because there are so many different meals you can make with these ingredients. Most importantly, these proteins are the basis for meals which are easy to plan ahead of time.
You have to understand the way my schedule works. I grocery shop for the whole week after church on Sunday. Going to the store any other day of the week just doesn’t make sense with our family’s schedule. With me working a full-time weekday job and my husband working nights and weekends, we take advantage of whatever time we can to enjoy life together as a family. Meals are an important part of this together time.
In order to accomplish this together time, I plan meals which won’t keep me in the kitchen when I could be spending time with my family. My go-to recipes have always been ones which are easy to plan ahead and quick to execute.
Everyone in the family enjoys this ranch pork chop recipe because it includes that magic ingredient “Ranch dressing mix.” You can’t go wrong with ranch in our house!
I like it because it can be prepared ahead of time and freezes well. The extra added bonus is this pork chop recipe is gluten free, dairy free, and egg free.
I LOVE fruit chews but hate all the additives and the expense of them….so when we bought a case of peaches we decided to try Peach leather. What a wonderful, delicious, easy snack!!!
Ever have bunches of fruit and want to make fruit leather? Think you have to use a dehydrator or other special equipment? If you have a blender and an oven you can make this great snack.
What is fruit leather?
Fruit leathers are tasty and chewy dried fruits or also called homemade fruit rolls. Fruits are dried by removing water content through sun drying, or by using dehydrators. Another method is by drying in puree form, which is what I will show you in this recipe.
