Here’s how to make Baked Eggs in a Muffin Tin
Spray the muffin tin with cooking spray
Then crack one egg per muffin opening
Preheat the oven to 350 degree
cook in the muffin tin for 10-15 minutes in a 350 degree oven
Assemble the Egg McMuffins by placing ham, eggs, sharp cheddar on your muffins. You can sprinkle salt and pepper to taste or add sliced tomatoes or some spinach.

I saw a sale where it was buy one bag and then get one free. They were two pound bags and they were frozen. I paid $12.00 for the two bags. I knew I could get three meals out of the $12.00.
The items in this recipe are stables in my home. I always have garlic, lemon juice, and salt and pepper. The rest of the ingredients are optional. The tilapia fish is a mild fish so it will take on the flavor of what you add to it.
I made this recipe using foil but I could have just put the fish on the steamer basket if I wasn’t cooking the entire two pound bag. I usually do not cook that much but I made dinner for that night and then I want the rest of the fish for taco’s the next day for lunch.

My mother-in-law was visiting this weekend and I decided to make our St. Patrick’s day feast a bit early. She is Irish and I thought it would be fun to have the traditional Corned Beef, potatoes, carrots and cabbage while she was here. While shopping for the corned beef it became apparent that I had not done my research. There are two cuts of corned beef; point and flat cut. The point cut is cheaper. Not knowing what to get, I purchased both! We needed two anyways with the crowd we had.
I made the point cut in the crockpot. I just added the seasoning packet and let it cook all day. About half way through cooking, I added the cabbage. The flat cut was placed in a roaster pan with potato chunks, carrots, the seasoning packet and water. I roasted it at 300 degrees for 6 hours.
