My dear friend, Laura, shared a recipe with me years ago called ” Sweet and sour Chicken”. It calls for 1 lb of boneless, skinless chicken breasts, 1 small bottle of Catalina dressing, 1 jar of peach preserves, and 1 envelope of onion soup mix. Simply mix together, pour over chicken breasts and bake. I have experimented with this basic recipe many different ways. Using pineapple preserves and the juice and zest of 1 lime creates the refreshing flavors of the Caribbean. An Asian-inspired variation uses orange marmalade and soy sauce topped with crispy chow mein noodles or wontons.

The busier life gets, the more I use my slow cooker. I like meals that taste baked, but are actually made in the slow cooker which is a very easy method of cooking. This casserole bakes slowly with very little moisture. I was skeptical, at first, because this recipe didn’t call for any liquid in the slow cooker. But, I gave it a try, and I’m so glad I did. The edges browned beautifully giving the dish a crispy texture. This recipe allows for substitutions, too. Use your favorite “cream of” soup; use ground beef or turkey instead of sausage; use unpeeled or peeled potatoes; vary the cheese using Swiss or spice it up by using pepper Jack. Over the weekend my daughter and I spent some time a local farm. We went to get some pumpkins, but ended up coming home with pumpkins, fresh bread, some veggies, and some delicious red apples. Apples are one of my favorite things to cook with during the fall, and I was super excited to make a yummy dessert for my family with them. Apple Crisp is one of my easy go-to recipes for fall parties and get togethers. It doesn’t take long to make OR to bake. And it tastes like a “burst of fall in your mouth!” or so says my daughter.
