I hope everyone is having a fantastic week so far! I’ve been doing pretty well on my journey to healthy eating, but I’ve been struggling when it comes to ideas for side dishes. I mean you can only have a side salad so many time a week ha! So as I was grocery shopping this week I took a stroll through the produce section looking for new ideas. I stumbled across the cauliflower and realized something, I have never tried cauliflower in any state other than raw. I know I know, crazy right? So I went ahead and bought some and took it home. I decided it would be best to try an easy recipe first, and if that went well I could find other ways to cook it. Well let me tell you, this easy roasted cauliflower recipe turned out SO amazing and it was done in no time at all! I love serving healthy and delicious snacks for my family that’s why I always make it a point to find a lot of new healthy recipes. This Deep Fried Mushrooms Recipe is one of my favorite. It’s a great appetizer or snack recipe that everyone will enjoy.

This week my daughter started her first season of soccer. This is a really big change for us because we have spent the last 3 years in the dance studio. My daughter decided it was time for a change and I told her I would always support her in her activities so that is what has led us to the soccer field! Every Saturday we have a game, and the parents are responsible for bringing snacks to the games. I’m up next week and I just found up that a child on our team has a dairy allergy.
