A skeleton with big strong bones? A ghost with a hallowing boo? A zombie with a hungry gaze? Maybe a pirate with a patch? Or a princess with a pretty crown? Has your child decided what they are going to dress up as for Halloween? Mine will change their minds in what feels like a million time between now and Halloween night. One thing that doesn’t change is how important it is to give them a good meal before they go out trick or treating and start gobbling treats.
Fall is in the air. I know this because later on today I get to go sit outside for a soccer game. In the rain. When it’s 59 degrees. Doesn’t that sound fun? The things we do for our children right? Anyways, now that fall is here, it’s time to start enjoying the flavors of fall. And for me, that means pumpkin. Oh yes, I am a pumpkin spice latte kind of girl. I also love pumpkin pie! So when I was asked to make a something for friend who happens to be gluten free I had an idea for a perfect recipe. Fun fact, did you know you can buy gluten free graham crackers? It’s true! You guys, I have a confession, I’m a reality TV addict. It’s true! And I’ve come to accept and embrace that. This week was the Big Brother finale, and every year I throw a wrap party for the end of the season. Hey, some people throw superbowl parties, I throw Big Brother parties, ha! But I digress, I told you that, to tell you about these amazing Hot Ham and Cheese Sandwiches that I made for the party. They.are.so.awesome. Do you hate making a lasagna? Do they take to long? I have the easiest meal ever to make. It freezes well. It can even be cooked in a crockpot. I make these ravioli casseroles for all my friends. I make them for every occasion because they are easy and taste wonderful! I believe that meals should be healthy, so this is my version in making sure your children eat their spinach. I also like that my kids can help me make this meal. I offer this baked ravioli casserole recipe as part of my freezer cooking swap co-op and it is well received. If you have ten minutes you can make a couple of these to get started in your freezer cooking, life-saving, meal preparation habit.

Fall is finally here! I don’t know about you, but fall is my favorite time of the year. I love the temperature, the colors, and most importantly, the food. Something about some hot soup and pumpkin flavored anything on a cool fall night just flat out does it for me. As most of you know, I’ve been on a health centered journey for a few months now, and I plan to carry that right on in to the holiday season. But that doesn’t mean that I have to give up the food I love! Portion control and quality ingredients are the way to go when it comes making it through the holidays without expanding your waistline (or feeling like you are missing out!).
