Low Calorie Pumpkin Pie

Fall is the perfect time to break out this Low Calorie Pumpkin Pie recipe! I love all things pumpkin, and pie, so to be able to have a low calorie version that I can enjoy guilt free during the fall season is awesome! A piece of this pie clocks in at only 172 calories. With a calorie count like that, dessert first is in order!

Here is how to make this Low Calorie Pumpkin Pie Recipe:

Low Calorie Pumpkin Pie

Low Calorie Pumpkin Pie

Ingredients

  • 1 can pumpkin. (not pumpkin pie filling, just pure pumpkin!)
  • 2 tbsp light butter, softened
  • 3/4 cup light brown sugar
  • 1/2 cup fat free milk
  • 1 large egg
  • 2 egg whites
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 frozen pie crust sheet, thawed.

Instructions

  1. First, Preheat your oven to 350 degrees.
  2. Lightly dust a surface with flour and roll out your dough, place in a 9 inch pie pan, and cut off the excess.
  3. Place pumpkin in a large bowl. Add the butter, and mix well. Mix in brown sugar, eggs, milk, pumpkin pie spice, and vanilla extract in mix with an electric mixer. (or if you prefer, you can put it all in a blender like I did)
  4. Pour filling into your unbaked pie crust.
  5. Then place in the oven, bake for 60 minuets, let cool, and enjoy!

Now that Halloween is over, my home has switched in to full holiday mode. Yep, I’m one of those people that don’t mind that it’s the fist week of November and they are already playing Christmas music in the store. I love the feel of the holiday season. It calls for 1 lb of boneless, skinless chicken breasts, 1 small bottle of Catalina dressing, 1 jar of peach preserves, and 1 envelope of onion soup mix. Simply mix together, pour over chicken breasts and bake. I have experimented with this basic recipe many different ways. Using pineapple preserves and the juice and zest of 1 lime creates the refreshing flavors of the Caribbean. An Asian-inspired variation uses orange marmalade and soy sauce topped with crispy chow mein noodles or wontons.

This year I am trying to eat healthy meals that are easy to make. I do not want to spend my time in the kitchen but I want to create meals that matter. I want healthy, tasty meals, that do not require a lot of dishes. I came up with this recipe. Continue reading

The busier life gets, the more I use my slow cooker.  I like meals that taste baked, but are actually made in the slow cooker which is a very easy method of cooking.  This casserole bakes slowly with very little moisture.  I was skeptical, at first, because this recipe didn’t call for any liquid in the slow cooker.  But, I gave it a try, and I’m so glad I did.  The edges browned beautifully giving the dish a crispy texture.  This recipe allows for substitutions, too.  Use your favorite “cream of” soup; use ground beef or turkey instead of sausage; use unpeeled or peeled potatoes; vary the cheese using Swiss or spice it up by using pepper Jack.
