Summer time is officially here! It’s time for some fun, sun, and easy weeknight meals. Our summer days are usually filled with day trips, time spent with friends, and lot’s of time hanging outside in the sunshine. Which means by the time we get home for the night, I am NOT in the mood to make a complicated meal for dinner. But I’m also not one to eat out a lot or eat things from a box. Luckily there are so many meals you can make in no time at all that are still yummy and homemade. One of my kids favorite meals is my Buffalo chicken sloppy joes! These tasty little (and sometimes messy) sandwiches only take about 1/2 an hour to make and are full of flavor. Let’s check out how to make them shall we?

Here is how to make my Buffalo Chicken Sloppy Joes Recipe:

You Will Need:

  • 1 lb ground chicken
  • 1 small can tomato sauce
  • 1 cup buffalo sauce
  • 1 onion (minced)
  • buns
  • optional: blue cheese crumbles for topping

Instructions for making my Buffalo Chicken Sloppy Joes:

Step 1: In a skillet over med/high heat brown your minced onions. Add in your ground chicken and cook until browned. Drain.

Step 2: After draining your chicken return it to your skillet and add in your tomato sauce and buffalo sauce. Mix and let simmer for about 5 minutes or until thickened.

Step 3: Grab a bun and slap some of your mix on a bun. Top with blue cheese crumbles and enjoy.
