Thanksgiving was wonderful! It was so much fun to have all of my family at my house. I made three gluten free desserts for Thanksgiving this year. As I told you in my last blog, this was my first gluten-free Thanksgiving and the dessert portion of the meal has traditionally been my territory. I usually make pumpkin pie and pumpkin cheese cake. However, this year, I added a Pumpkin Roll, and it was truly scrumptious. (that reminds me of a song from Chitty Chitty Bang Bang) Anyway, the Pumpkin Roll is basically a thin pumpkin spice cake rolled around a filling made of mascarpone cheese, whipped cream, powdered sugar, vanilla and cinnamon. It was amazing! You can find the recipe on a blog called Baked Bree. And now that I am thinking about it again (the pumpkin roll), and I am sad that it is all gone — I will just have to make another one —soon. The only thing I might add next time around is some liquor. I think the roll was calling out for some. Just sayin.Continue reading
We had a large box. I didn’t get a before pic, but you can tell that it is large. My kids have been playing with it for about 2 weeks now. Well, the top flaps started to rip off. We thought about throwing away, but the kids were not happy about it. So we had a quick brain storm and decided that we should take the ripped part off and make doors. We taped the edges so we don’t have to worry about anyone cutting their fingers.
We just did this last night, and they already have some residents that moved in. I had to take this picture quickly as since they have been up for 10 min already and the residents have had to vacate the box. My 2 kids have taken up residence in it.
They have such great imagination. They were able to play with it for about 1 hour last night. And in that 1 hour it was an ice cream shop, a house, a restaurant, a fort, and a broken house they had to fix.
This morning it is the beauty shop. I wonder what it will be this afternoon.
So With the holidays coming up, why not give your kids a box for christmas. Or at least keep the boxes around for some great imaginative play.

I know stir-fry can be healthy but I have always avoided cooking them. I even owned a wok for several years but the thought of cooking with soy sauce grossed me out. I do not like Thai or Chinese food so ideas of sauces friends would suggest were quickly shot down. I finely grew frustrated when I had a load of fresh veggies and stir fry seemed like the logical way to cook them. So I took to the internet and compared different recipes. For dinner that night I made stir fry (soy sauce free) and my family and I loved it. Enjoy the recipe below and bring stir fry to your table.
