Working Mom- What’s for Dinner?

Well it has to be quick, cheap, and easy. This only applies to cooking not shopping. I enjoy making healthy meals while staying within our budget. I made Salmon with Pan fried potatoes and steam Asparagus.

The salmon was $6.00 I brushed it with olive oil and pesto on my husband’s fish. My son can’t have nuts so I only used olive oil on his and mine. I baked it at 400 degrees for 10 minutes or until it was pink.

Then I chopped potatoes from the bag I bought two weeks ago for $1.00. I threw in some salt, pepper, olive oil and rosemary.

Finally, I steamed asparagus. It was on sale for $1.99.
