Working Mom What’s for Dinner: Strawberry Crepes

This week we are relying on the cooking of others either my sister who could give Martha Stewart a run for her money or restaurants. We are at the mercy of whatever place we find based on the equation if 2 out of 3 are upset then stop and eat. We hope to survive a 14 hour road trip with our three kids. This should be fun or crazy. We have made it to our old stomping grounds Gainesville, Florida. We stopped last night here because this is where Mat and I met. We haven’t been back to Gainesville since so it was on the way to our final destination and at 2:30 AM last night when all three kids were wide awake in the car we decided to stop and take a walk around in the morning. Then we will finish the last 2 hours of our trip hopefully landing at my sister’s house or our hotel for a nap.

Here is one of my favorite recipes from college because in college anytime is breakfast time!

Strawberry Crepes

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • Strawberries
  • 1/2 cup of sugar
  • 1 lemon
  • dash of powder sugar or whip cream (you can even fill them with 1 cup of cottage cheese per four crepes)
  1. In a mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

In a Sauce pan on low combine the cut strawberries, a couple squirts of lemon juice and 1/2 cup of sugar. I heat them until the sugar coats the berries. I  then place the strawberries in the crepe. Finally, I top them with powdered sugar or whip cream. I often added Nutella because everything is better with Nutella.
