This weeks grocery trip

Well, I am back from Wedding #1. I stayed home today to get unpacked and organized. I also made a quick trip to the store and the farmer’s market.

Here is this weeks menu:

Tuesday-homemade tomato soup with fresh bread from the farmers market (the tomatoes were ripe and I had to use them ASAP) Used the recipe in Woman’s day

All Purpose Grilled Tomato soup

INGREDIENTS

    6 ripe tomatoes (about 2 lb.)
    2 cloves garlic, chopped
    1 shallot, chopped
    2 tsp fresh thyme leaves
    2 tsp fresh chopped rosemary
    2 T bsp plus 2 tsp extra-virgin olive oil
    1 large onion, chopped
    1?2 cup chicken broth

PREPARATION

    1. Heat grill. Put tomatoes, 1?2 the garlic, the shallot, thyme, rosemary and 2 Tbsp of the oil in a large bowl; toss.

    2. Place tomatoes on grill. (Don’t wash bowl; you’ll use later.) Grill tomatoes, covered, 10 minutes, turning occasionally, until skins blacken and tomatoes are soft. Return to bowl.

    3. Scrape tomato mixture into a food mill or blend in a food processor until smooth. Set aside.

    4. Heat remaining 2 tsp oil in a large saucepan. Add onion and sauté 5 minutes or until translucent. Add remaining garlic and cook a few seconds or until fragrant.

    5. Add grilled tomato purée and chicken broth; bring to a boil. Reduce heat and simmer 5 minutes for flavors to blend.

Wednesday-Breakfast for dinner ( I grabbed the wrong sausage looked like the italian one for my sauce turned out to be the breakfast one) No problem one order of Paula Deans Sausage and Biscuits coming up. I have to use all those grands biscuits I have and eggs.

For Sawmill Gravy: 
1 pound ground sausage
4 slices thick-cut bacon

½ medium onion, diced
2 cloves garlic, minced
3 tablespoons all-purpose flour
1 teaspoon salt
2 teaspoons black pepper
2 cups half-and-half
2 tablespoons butter 
In a large skillet, combine the sausage, bacon, onion, and garlic. Cook over medium heat until the sausage is browned and crumbles. Stir in the flour, salt, and pepper; cook for 1 minute, stirring constantly. Gradually stir in the half-and-half. Cook over medium heat, stirring constantly, until the mixture is thickened. Stir in the butter until well blended.

Thursday-Rosemary chicken drumstick with a side of fresh squash and peppers

My recipe-Place drumstick on stoneware brush with olive oil and break up fresh rosemary. Bake on 350 degrees until the meat is cooked use a meat thermometer

To make the squash just place in a pan with olive oil cook on medium heat until they are translucent and the peppers are tender. I usually throw in some garlic or onions to taste.

Friday-Rachel Ray’s - Sicilian Eggplant Marinara over Penne

SATURDAY- Roasted chicken and potatoes with green beans

Sunday- London Broil, mash potatoes , and salad

Lunch- Rachel Ray’s chili, ham and turkey sandwiches, healthy choice meals.

Breakfast- I made banana bread, cereal, oatmeal, pancakes, and sausage and biscuits I am going to make a double batch because it is SOOOO good

Spent $38.03 at food lion on the spices, diapers, cheese cake ingredients, eggs, 2 healthy choice meals, onions, shallots, spaghetti sauce, bagels saved $17.78

Farmer’s market Spent got fresh bread, egg plant, peppers, tomatoes, kale, cucumbers, peppers, green beans, peaches, and squash $14.35

Total spent: $52.38

Just a note I can’t place the farmers market total in my spending percentage because I am not sure what I saved. I know I save a lot by buying locally.

I only have spinach to buy which I get at sam’s club for $4.83 so I should be at about $60.00 for this week.
