The Ultimate Grilled Pineapple Summertime Snacks!

I am sharing a recipe for TRISCUIT crackers topped with grilled pineapple, feta cheese,  and balsamic glaze – the ultimate grilled pineapple summertime snacks.  

The warm weather has finally arrived here in Central VA. After weeks of rain that felt like months, the sun is shining and the temperatures are rising. We have already fired up the grill for dinner several nights this week and we are trying some new summertime snacks too.

How to make easy summertime snacks with grilled pineapple

Have you ever grilled pineapple? I have eaten grilled fruits including pineapple but I have never grilled them myself. Grilling pineapple is really delicious and after making it for this TRISCUIT cracker appetizer recipe I know I will be making it again soon.

Ingredients:

TRISCUIT Original Crackers

feta cheese, crumbled

balsamic glaze

fresh pineapple, grilled

These ingredients for summertime snacks perfectly combine Hawaiian and Greek flavors on one cracker.

Directions:

Gather all your ingredients. You want to have everything ready so you can put all the toppings on the crackers when you are done grilling the pineapple.

Peel, core, and slice the pineapple. Now you can do this the hard way or the easy way. The hard way is to well let’s just say you should do it the easy way rather than wrestle with your pineapple and barely win. The EASY way to slice a pineapple is to use a pineapple corer and slicer. This little tool is genius and will save you time, energy, and spare you from cussing at your fruit.

Cut the top off of the pineapple and save it

First cut the top off the pineapple – save it because you can use it to add a decorative touch to your table setting or serving plate.

Then start slicing the pineapple by pressing the corer into the top. Then you need to hold the outside of the pineapple and slowly twist the handle of the corer. While you are turning the corer apply steady even pressure to work the blade through the entire pineapple.

When the corer reaches the bottom of the pineapple stop turning

When you reach the bottom of the pineapple, slowly pull out the corer and pineapple center.

Awesome! Simple and easy to use. But this little genius device gets even better. To remove the pinapple slices from the corer you just need to remove the handle and slide them off.

Once you have your pineapple sliced it is time to grill them. Grill them on a low temperature about 250° F for a few minutes on each side. They are done when they have brown grill marks on both sides. Now you can start assembling the ingredients onto the cracker. Start with a TRISCUIT Original cracker and add a chink of pineapple or two. Go ahead  – don’t be afraid to load it up. TRISCUITS were “made for more” so it will hold all your toppings.

Next add the feta, don’t be shy, everyone loves cheese!

Drizzle with balsamic glaze and serve immediately. You won’t be able to wait to eat them anyway. I could barely stop myself from gobbling them up when I was taking pictures of them.
