I have meant to update you on my Strawberry Butter and Cherry Jam canning all week. It went very well! I LOVE the strawberry butter! In fact, there was a little leftover after canning and I ate it all. Yes, I was selfish and did not let anyone else have it! When strawberries are on sale, I am going to pick up some more to make another batch.
The Cherry Jam came out great as well. It looks really pretty in the jar and it will make a wonderful gift! Find the Cherry Jam recipe I used HERE. One helpful tip, if the jam foams as you cook it (most likely it will), add a 1/2 teaspoon of butter or margarine. I did this for the Strawberry Butter as well.
For the Strawberry Butter, I used about 5 cups of Strawberry Puree and 1 tablespoon of Lemon Juice. I cooked it down for about an hour and then added 1 cup of sugar. Since the strawberries cook down, you will get less to can than you would with strawberry jam. However, the butter is healthier as it has a lot less sugar!
