My family loves pizza and we could probably live on it a couple times a week for every meal. This however isn’t healthy and therefore we don’t do it. I like to give them something they like but with a healthier twist so we make pizzas at home on English Muffins. This gives me control of the amount of cheese and toppings that are put on. In honor of St. Patrick’s Day we have created Spinach and Cheese Pizzas.
Our Green and White Muffin Pizzas
1 pack English Muffins (whole wheat preferably)
1 cup canned or fresh (if canned make sure to remove excess moisture)
8 oz mozzarella cheese (shredded)
1 1/2 cups Pizza Sauce (you can also use Alfredo or Spaghetti Sauce also)
Optional: Can of Mushrooms and Black Olives
Split open English Muffins and place on baking sheets.
Spoon the sauce on the English Muffins.
Layer the Spinach on top of the sauce.
If you are adding extra ingredients, place them on now or after the cheese.
Sprinkle the cheese on top of the spinach.
Bake on 350* for about 10 minutes or until the cheese is melted and brown.
Remove from oven and Serve.
