Green and White Muffin Pizzas Recipe

My family loves pizza and we could probably live on it a couple times a week for every meal. This however isn’t healthy and therefore we don’t do it. I like to give them something they like but with a healthier twist so we make pizzas at home on English Muffins. This gives me control of the amount of cheese and toppings that are put on. In honor of St. Patrick’s Day we have created Spinach and Cheese Pizzas.

Our Green and White Muffin Pizzas

1 pack English Muffins (whole wheat preferably)

1 cup canned or fresh (if canned make sure to remove excess moisture)

8 oz mozzarella cheese (shredded)

1 1/2 cups Pizza Sauce (you can also use Alfredo or Spaghetti Sauce also)

Optional:  Can of Mushrooms and Black Olives



Split open English Muffins and place on baking sheets.

Spoon the sauce on the English Muffins.

Layer the Spinach on top of the sauce.

If you are adding extra ingredients, place them on now or after the cheese.

Sprinkle the cheese on top of the spinach.

Bake on 350* for about 10 minutes or until the cheese is melted and brown.

Remove from oven and Serve.

    These look delish and easy. I love spinach and mushrooms on my pizza. My daughter — not so much(at least the mushroom part — she does NOT like them). This way, we can both get what we want.

    Is that spinach I see, it is spinach? I absolutely love it on pizza, I love spinach rolls or spinach and beans over macaroni. Now why didn’t I think of this instead of the regular English muffin pizza most people make.

    If you need to use the can, I think Popeye Spinach is the best

    I love english muffins and I like pizza but I never thought to combine the two. I will have to try these. This would make some nice and easy snacks.

    That sounds easy enough, would be good for a toddler lunch idea with lots of veggies or heck even a breakfast pizza.
