Spicy Steak Breakfast Burrito (Repurposed Recipe)
Serves 4
Active Time: 24 minutes
Total Time: 24 minutes
2 grilled spicy sirloin steak tips (leftover from Steak Taco Salads)
1 Tbsp. butter
8 eggs, beaten
4 large flour tortillas (9 1/2-inch)
1 cup grated Monterey Jack Cheese
1 avocado, chopped
1/4 cup store-bought salsa
Cut the steaks tips into 1/2-inch cubes. Add butter to a large non-stick skillet over medium heat. When hot, add the steak and cook for about 1 minute. Add the eggs. Cook and stir the eggs until they are just cooked. Remove the pan from the heat.
While the eggs are cooking, warm the tortillas in the microwave for 30 seconds.
To assemble the burritos, line up the warmed tortillas on the counter. Add 1/4 cup cheese to the center of each tortilla. Add 1/4 of the egg mixture, 1/4 of the avocado and 1 Tbsp. salsa to each tortilla.
Working one at a time, fold the bottom edge of each tortilla up and over the filling. Fold in each side and then roll the burrito to close it. Eat immediately or wrap in foil for traveling.
