Busy mornings just got easier with this Crock Pot Chicken Curry

I am a simple cook and have never been one for curry or cumin in my food. A few months back I made a promise to myself to try some new things. When a friend told me about a curry chicken she made, I knew I had to try it. I added a few things of my own and loved the way it came out. I was pleasantly surprised when my daughter requested leftovers for lunch the next day.

So step out of the box and try this Crock Pot Chicken Curry.

Simple and Easy Crock Pot Chicken Curry

Ingredients

  • 4 Cloves Garlic, finely chopped or 2 Tsp Minced Garlic
  • 2 Tbsp Red Wine Vinegar
  • 1 Tsp Ground Cumin
  • 1 inch fresh ginger grated (or 1 Tbsp ginger powder)
  • 1 Tsp Curry Powder
  • 1 Tsp Cayenne Pepper
  • 1/2 Tsp Nutmeg
  • 1 Tsp Salt
  • 1 Tsp BlackPepper
  • 2 Tsp Water
  • 1 Medium Onion, chopped
  • 8 Chicken Thighs

Instructions

  1. Combine all ingredients except for the onion and chicken thighs in bottom of Crock pot.
  2. Make sure that all spices are dissolved in the liquid.
  3. Place Chicken Thighs in Crock Pot coating well with seasoning mixture.
  4. Toss chopped onions on top of chicken thighs and mix in.
  5. Cook on low for 6-7 hours or high for 4-5 hours.
  6. Serve with Basmati Rice or Rice Noodles.
