Simple and Easy Crock Pot Chicken Curry

Busy mornings just got easier with this Crock Pot Chicken Curry

I am a simple cook and have never been one for curry or cumin in my food. A few months back I made a promise to myself to try some new things. When a friend told me about a curry chicken she made, I knew I had to try it. I added a few things of my own and loved the way it came out. I was pleasantly surprised when my daughter requested leftovers for lunch the next day.

So step out of the box and try this Crock Pot Chicken Curry.

Simple and Easy Crock Pot Chicken Curry

Ingredients
  

  • 1 inch piece of ginger finely grated
  • 2 Tbsp Red Wine Vinegar
  • 2 Tsp Curry Powder
  • 1 Tsp Ground Cumin
  • 4 Cloves of Garlic finely chopped or 2 Tsp Minced Garlic
  • 1 Tsp Kosher Salt
  • 1 Tsp Black Pepper
  • 1 Medium Onion Chopped
  • 2 Tbsp Water can use Coconut Milk
  • 1 1/2 Lbs Chicken Thighs

Instructions
 

  • In Crock Pot, Combine the dry seasonings and water.
  • Mix together very well.
  • Add Chicken and Onions and toss to cover completely.
  • Cook for 6-8 hours on low or 4-5 hours on high.
  • If you think it is drying out you can add water by the Tbsp every few hours.(More common if you use a chicken breast vs.a thigh)
  • Serve over Basmati Rice or Rice Noodles.
