Now that kids are busy with school for sure their tired and hungry when they go home. Surprise them with a yummy snack that they will surely love to eat and also learn how to make. This yummy kid friendly snack and dessert is a less messy version of peach pie and crumble cake!

Recipes for Snacks for Kids: Peach Crumble Bars

Ingredients
  

Ingredients for the dough:

  • 3 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup 2 sticks unsalted butter, cold
  • 1 egg lightly beaten

Ingredients for the filling:

  • 5 cups diced peaches about 7 peaches peel first if desired
  • 2 tablespoons lemon juice
  • 1/2 cup flour
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  • Preheat the oven to 375 degrees.
  • In a medium bowl prepare the dough by whisking the dry ingredients together first (flour, sugar, baking powder and salt.) Then using a pastry blender if you have one or a fork if you don't, 'cut' in the butter and egg. The dough should be crumbly.
  • Use the wrappers of the butter sticks to grease a 9x13.
  • Press 1/2 of the dough mixture into the 9x13.
  • Put the dough bowl and 9x13 in the refrigerator while you mix the filling.
  • In another bowl prepare the filling by putting the lemon juice on the peaches. Mix the dry ingredients together in another container then 'dust' the peaches with the dry ingredients. The longer you let them sit the pieces will moisten the dusting. That is not a problem!
  • Spread the filling evenly on the crust in the 9x13 then sprinkle the rest of the dough on top.
  • Bake at 375 for 45 minutes or until lightly brown.

OPPORTUNITY FOR ADULT HELP: Putting the 9x13 in and out of the oven may be difficult for your child.

    Tip for cooking with kids: If you don't have a glass measuring cup use a canning jar with the measurements on the side. That way if you get distracted while measuring 3 cups of flour you don't have a mess wondering if all 3 are in the bowl.
