Do you love muffins? I love different kinds of muffins but one of my favorites are those fresh fruity flavored ones. Today I’m sharing with you one of my family’s favorite, my Recipe for Cranberry Muffins. This is super easy to make and the combination of orange and cranberry flavor is refreshing to the palate.

Ingredients:

  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2  cup  of cranberries
  • 1/2 cup of cranberry berries in the sauce
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 2 teaspoons of grated orange rind
  • 1 teaspoon vanilla extract

Directions:

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups for easy removal.

If using fresh cranberries, chop them coarsely. If using frozen cranberries, ensure they are thawed and well-drained.

Mix the dry ingredients together: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Gently fold in the chopped cranberries and the zest of one orange into the dry ingredients. This ensures even distribution of the cranberries throughout the muffins.

In a separate bowl, whisk together the wet ingredients: vegetable oil, fresh orange juice, eggs, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix. A few lumps in the batter are normal.

Spoon the batter into the prepared muffin cups, filling each about two-thirds full.

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean, with perhaps a few moist crumbs attached.

Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

For an extra touch of sweetness, you can drizzle a simple orange glaze over the cooled muffins.

Orange Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice

Instructions for Glaze:

  1. Whisk together the powdered sugar and fresh orange juice until smooth.
  2. Drizzle the glaze over the cooled muffins.
