Rachel Ray what’s for dinner: Crispy Parm-Crusted Fillet of Fish and Bowties with Peas

Crispy Parm-Crusted Fillet of Fish and Bowties with Peas

Serves 4

  • 1 1/2 cups all-purpose flour

  • 1 tablespoon Old Bay seasoning

  • 3 eggs

  • 4  filets of tilapia or sole (6 ounces each) ON SALE AT FOOD LION  $2.99 LB

  • 2 cups breadcrumbs orcrushed crackers

  • 3/4 cup grated Parmigiano Reggiano cheese, divided

  • 1 tablespoon thyme, finely chopped

  • Zest of 2 lemons, then cut into wedges, divided

  • 1 box bowtie pasta, regular or whole grain

  • 6 tablespoons extra virgin olive oil (EVOO), divided

  • 1 large onion, finely chopped

  • 3 cloves garlic, finely chopped or grated

  • 1 cup frozen peas, defrosted

  • 1-2 tablespoons butter

  • 3 sprigs mint, chopped

  • 1/4 cup parsley, chopped

  • Salt and freshly ground pepper

  • 1 head butter lettuce, for garnish (not needed unless you think your kids will eat it)

I picked this recipe because I am not sure what to do with Tilapia but it is often on sale and we like fish. I also grabbed this recipe because most of the items are in my freezer or pantry already this will reduce my monetary output. The most important reason I selected this is because it is easy and healthy! I mean who has time to be a gourmet cook with two kids under five. Lets face it I can only do what I can do ! I don’t like seafood much but my family does so I have a pineapple salsa talapia recipe that uses taco seasoning and the talapia and is amazing and a mango salsa one that is really good too!
