2 cups breadcrumbs orcrushed crackers
3/4 cup grated Parmigiano Reggiano cheese, divided
1 tablespoon thyme, finely chopped
Zest of 2 lemons, then cut into wedges, divided
1 box bowtie pasta, regular or whole grain
6 tablespoons extra virgin olive oil (EVOO), divided
1 large onion, finely chopped
3 cloves garlic, finely chopped or grated
1 cup frozen peas, defrosted
1-2 tablespoons butter
3 sprigs mint, chopped
1/4 cup parsley, chopped
Salt and freshly ground pepper
1 head butter lettuce, for garnish (not needed unless you think your kids will eat it)
I picked this recipe because I am not sure what to do with Tilapia but it is often on sale and we like fish. I also grabbed this recipe because most of the items are in my freezer or pantry already this will reduce my monetary output. The most important reason I selected this is because it is easy and healthy! I mean who has time to be a gourmet cook with two kids under five. Lets face it I can only do what I can do !
