Sauteed Pork Chops with Sherry-Berry Pan Gravy and Rhubarb Chutney

Serves 4

  • 6 tablespoons butter, divided
  • 3 tablespoons sugar
  • 1 tablespoon lemon juice (from a wedge of lemon)
  • 1/4 cup balsamic vinegar
  • 2-3 stalks rhubarb, trimmed and chopped (about 1/2 pound)
  • A handful of golden raisins
  • 2 tablespoons extra virgin olive oil (EVOO)
  • 4 boneless, center-cut pork loin chops (8 ounces each) At KROGER just  $3.79
  • Salt and pepper
  • 1 tablespoon all-purpose flour
  • 1/4 cup sherry
  • 1/2 cup chicken or beef stock
  • 2 tablespoons strawberry, blackberry or raspberry all fruit spread, such as Polaner brand (use Blackberry you should have some left from the ribs)

Here is another recipe to use the sherry you bought

  • Roasted Tomato and Sherry Soup

  • 2 tablespoons extra-virgin olive oil
  • 2 medium onions, diced
  • 2½ cups Roasted Tomatoes just $.78 a LB at Krogers
  • 1 garlic clove, finely chopped
  • 3/4 cup milk
  • ½ cup shredded basil (about 8 leaves)
  • 3/4 cup medium-dry Sherry, such as amontillado
  • One 14.5-ounce can chicken or vegetable broth
  • Salt and freshly ground pepper
  • 2/3 cup shredded sharp cheddar cheese (about 3 ounces)  3 for $5 at Kroger

 

Here is a yummy salad that I copied to the best of my ability from my favorite dining establishment. You can you the raisins form the above recipe.

Spinach

  • 1/2 cup of Golden raisin
  • 1/2 cup of pine nuts
  • 1 Tablespoon of balsamic vinegar
  • 2 Tablespoons of Olive  Oil
  • Can of Mango or A fresh Mango
  • 1/2 cup to top the salad Asiago shredded cheese

Blend the above in a food processor and put the cheese, raisins, and the dressing on the spinach salad
